Abstract
Yapılan bu tez çalışmasında: farklı renkte LED uygulamaların çileğin biyokimyasalbileşimi ile hasat sonrası kalitesi ve muhafaza süresine etkileri incelenmiştir. Buamaçla çilekler, 0oC ve 5oC olmak üzere iki farklı sıcaklıkta ve %85-90 oransal nemşartlarında, 10 gün süreyle depolanmıştır. Depolama sırasında çilekler sürekli olarakmavi, kırmızı ve ultraviyole-A (UVA) LED ile aydınlatılmış veya bir saat süreyleultraviyole-A LED aydınlatma uygulandıktan sonra karanlıkta (UVAS) ve yalnızcakaranlık ortamda tutulmuştur. Araştırmada, deneme başlangıcında ve 2 günlükaralıklarla alınan örneklerde; toplam antosiyanin miktarı (mg/kg TA), renk ölçümleri(L*, a*, b*, hue açısı, kırmızılık indeksi), suda çözünür toplam kurumadde (SÇKM)miktarı, fruktoz, glikoz ve toplam şeker miktarı (%), titrasyon asitliği (%), meyve etisertliği (N) ve ağırlık kaybı (%) ölçüm ve analizleri yapılmıştır.Çalışmada 0oC depolanan çileklerde, antosiyanin miktarının ve kırmızılık renginkorunması ile fruktoz miktarının arttırılması açısından mavi LED uygulamasınınetkili olduğu bulunmuştur. Bununla birlikte kırmızı LED uygulanan çilekmeyvelerinin L* , b* ve horenk değerleri ve glikoz miktarı kontrole göre yüksekbulunurken, kırmızı LED ışığın titrasyon asitliği ve SÇKM miktarını korunmasındada etkili olduğu belirlenmiştir. Ayrıca çilek meyvelerinin toplam şeker miktarınınarttırılmasında, meyve eti sertliğinin korunmasında ve ağırlık kaybınınazaltılmasında ise UVAS uygulamasının öne çıktığı saptanmıştır.Araştırmada 5°C'de depolanan çileklerde kırmızı LED ışığın antosiyanin miktarınınarttırılması, meyve eti sertliğinin korunması, ağırlık kaybının azaltılması ve SÇKMmiktarının arttırılması açısından oldukça etkili olduğu bulunmuştur. Ayrıca L* a* b*renk değeri için UVA ve hue açısı ve kırmızılık indeksi açısından ise UVASuygulamaların daha etkili olduğu tespit edilmiştir. Buna karşılık yapılan LED ışıkuygulamalarının fruktoz, glikoz ve toplam şeker üzerinde önemli etki göstermediğive titrasyon asitliğini azalttığı bulunmuştur. In this thesis study, the effects of different color LED applications on the postharvestquality in the cold storage condition and biochemical composition of the strawberrywere investigated. For this purpose, strawberries were stored at two differenttemperatures, 0oC and 5oC for 10 days at 85-90% relative humidity conditions.During storage, strawberries were continuously illuminated with blue, red orultraviolet-A (UVA) LEDs, or kept in the dark (UVAS) after applying ultraviolet-ALED illumination for one hour, and only stored in the dark environment (control). Inthe study, in samples taken at the beginning of the trial and at 2-day intervals; themeasurement and analysis such as total anthocyanin content (mg / kg TA), colormeasurements (L *, a *, b *, hue angle, redness index), total soluble solids (TSS),fructose, glucose and total amount of sugar (%), titratable acidity (%), fruit firmness(N) and weight loss (%) were done.In the study, it was found that the application of blue LED was effective in retainedthe amount of anthocyanin and red color together with increasing fructose content ofstrawberries stored in 0oC. However, L *, b * and ho color values and glucosecontent of strawberry fruits treated with red LED were found to be higher thancontrol, while red LED light was found to be effective in maintaining titratableacidity and TSS. In addition, it was found that UVAS application was the mostimportant treatment in increasing the total sugar content of the strawberry fruits,preserving the hardness of the fruit and reducing the weight loss.In the study, it was found that the red LED light in strawberries stored at 5 ° C washighly effective in increasing the amount of anthocyanin, preserving the hardness ofthe fruit, reducing the weight loss and increasing the amount of TSS. In addition,UVA application for L * a * b * color value and UVAS applications in terms of hueangle and redness index were found to be more effective. In contrast, LED lightapplications were found to have no significant effect on fructose, glucose and totalsugar, and it decreased titratable acidity
