Abstract
Bu çalışmada vakum infiltrasyon yöntemi ile yapılan derim sonrası aminoetoksivinilglisin (AVG) uygulamasının domates meyvelerinde olgunluk, depo ve raf ömrü üzerine etkilerinin incelenmesi amaçlanmıştır. Deneme-1'de, renk kırım aşamasında derilen 'Grando F1' domates meyvelerine vakum infiltrasyon yöntemiyle 6 farklı dozda (0, 62,5, 125, 250, 500 veya 1000 mg l-1) ve 3 farklı vakum basıncında (0, -20 veya -30 kPa) AVG uygulaması yapıldıktan sonra 8 gün 20°C'de bekletilmiştir. Meyvelerin 20°C'de bekletilmesi sırasında -30 kPa'da 1000 mg l-1 AVG uygulaması, etilen üretim hızını %45,53 oranında azaltmış, meyve kabuk rengi, klorofil ve likopen içeriklerindeki değişimlerini 6 gün boyunca yavaşlatmış ve kırmızı olgunluğuna gelme süresini 8 güne çıkarmış; fakat ağırlık kaybı ve solunum hızı üzerine etkisi olmamıştır. Deneme-2'de renk kırım aşamasında derilen kontrol meyveleri ve -30 kPa'da 1000 mg l-1 AVG uygulanan meyveler 12°C'de 20 gün ve soğukta muhafazadan sonra 20°C'de 2 gün bekletilmiştir. Soğukta muhafaza ve raf ömrü periyodunda AVG uygulaması, kontrole göre etilen üretim hızını %24-26 oranında azaltmış, fakat solunum hızı, b* değeri, suda çözünebilir kuru madde miktarı, titre edilebilir asitlik, pH, askorbik asit ve fenolik madde içeriği ile antioksidan kapasite ve tat üzerine etki yapmamıştır. AVG uygulanan meyvelerde kontrole göre daha yüksek meyve eti sertliği, klorofil içeriği, L* ve h° değerleri, daha düşük likopen içeriği, a* ve C* değerleri belirlenmiştir. Kontrol meyvelerinin depo ve raf ömrü uzak pazarlara taşıma için 12°C'de 10 gün ve 20°C'de 2 gün, yakın pazarlara gönderilecek ve hemen tüketime sunulacak ise 12°C'de 20 gün ve 20°C'de 2 gün olmuştur. AVG uygulanması uzak pazarlara gönderilecek meyveler için 12°C'de 20 gün ve 20°C'de 2 gün depo ve raf ömrü sağlamıştır. The aim of this study was to determine effects of postharvest aminoethoxyvinylglycine (AVG) treatment using vacuum infiltration method on ripening, storage and shelf life of tomato fruits. In the experiment-1, 'Grando F1' tomato fruits were harvested at breaker stage and treated with AVG at 6 different doses (0, 62.5, 125, 250, 500 and 1000 mg l-1) and 3 different vacuum pressures (0 kPa, -20kPa and -30 kPa) using vacuum infiltration method and kept at 20°C for 8 days. AVG treatment of 1000 mg l-1 at -30 kPa reduced ethylene production rate by 45.53%, slow down changes in fruit skin color (L*, a*, C* ve h°), chlorophyll and lycopene content for 6 days and extended the number of days reaching to red ripe stage from 6 days to 8 days at 20°C, but did not affect weight loss and respiration rate. In experiment-2, fruits harvested at breaker stage, untreated or treated with 1000 mg l-1 at -30 kPa were kept at 12°C for 0, 5, 10, 15 or 20 days and at 20°C for 2 days after cold storage. Compared to control, AVG treatment reduced ethylene production rate by 24-26%, but did not affect respiration rate, b* value, total soluble solid content, titratable acidity, pH, ascorbic acid and phenolic content and antioxidant capacity and taste during storage and shelf life period. AVG treated fruits had higher fruit firmness, chlorophyll content, L* and h° values and lower lycopene content, a* and C* values, compared to control. Storage and shelf life of control fruits were 10 days at 12°C and 2 days at 20°C for shipping to distant markets or 20 days at 12°C and 2 days at 20°C for local or retail markets. AVG treatment provided storage and shelf life of 20 days at 12°C plus 2 days at 20°C for shipping to distant markets.
