Otelcilik ve turizm meslek liseleri ile kız meslek liselerinin yiyecek içecek hizmetleri alanı meslek dersleri okutulurken karşılaşılan sorunlar

Abstract

Bu araştırmanın amacı; turizm sektörünün yiyecek içecek alanına eleman yetiştirilen otelcilik ve turizm meslek liseleri ile kız meslek liselerinde yiyecek içecek hizmetleri alanında meslek dersleri eğitiminde karşılaşılan sorunların hem öğrenci hem de öğretmen boyutları ile belirlenmesidir.Konuyla ilgili literatür taraması yapılmış ve 2011- 2012 eğitim öğretim yılında Otelcilik ve Turizm Meslek Liseleri ile Kız Meslek Liselerinde görev yapan 132 öğretmene, bu okullarda eğitim-öğretimine devam eden 523 öğrenciye araştırmacı tarafından hazırlanan anket formu uygulanmıştır. Çalışmada kullanılan ölçeklerin güvenirliliğine ilişkin gerekli analizler yapılmış ve öğretmenlere uygulanan ölçeğin Chronbach?s Alpha değeri 0,77, öğrencilere uygulanan ölçeğin Chronbach?s Alpha değeri ise 0,70 bulunmuştur. Verilerin analizinde ?yüzde?, ?frekans?, ?bağımsız örneklem için t testi? , ? tek yönlü varyans (Anova) analizi? ve ?Tukey HSD testi analizleri yapılmıştır. Araştırma bulgularına göre; staj eğitiminde çalışma saatlerinin uzunluğu ve izinler konusunda öğrencilerin problem yaşadığına ilişkin ifade, araştırmaya katılan öğrenciler tarafından özellikle vurgulanmıştır (2,36 puan ortalaması). Ayrıca öğrencilerin uygulama için malzeme teminini kendi imkanları ile sağlamaları, araştırmaya katılan hem öğretmen (2,46 puan ortalaması) ve hem de öğrenciler tarafından bir sorun olarak ifade edilmiştir.Ayrıca araştırmaya katılan öğretmenlerin meslek derslerine ilişkin sorunların başında, uygulama derslerinin bireysel olarak yapılamaması gelmektedir (2,74 puan ortalaması). Öğretmenler kendilerini geliştirmeleri için hizmet içi eğitim kurslarının arttırılması gerektiğini (2,42 puan ortalaması) ifade etmektedirler. The aim of this research is to determine the problems, which are seen at vocational classes at the food and beverage service department of the schools such as hotel and tourism vocational school ,vocational school for girls which train employees for food and beverage department of tourism, for both teacher and student extent.The relevant review of the literature has been done and 132 teachers who work at hotel and tourism vocational school ,vocational school for girls in 2011-2012 academic year and 523 student who are trained at those schools have been applied the survey.Necessary analysis have been done to check the reliability of the scales used in this work and Chronbach?s Alpha value of the teacher scale has been found as 0,77, Chronbach?s Alpha value of the student scale has been found as 0,70. `Percentage?, `Periodicity?, ?inferential (independet samples t test? ,?one way ANOVA? and Tukey HSD post hoc? analysises have been used at the analysis of the datas.According to the indications of the survey, the expression, students have problems about length of working hours in intership training and subject of permissions, particularly emphasized by the students applied the survey (mean score is 2,36). Additionally, it is emphasized by the teachers (mean score is 2,46) and the students, applied the survey, it is a problem that students have to find the equipments, on their own for practices.Furthermore, it is indicated that one of the problems for teachers is not to be able to do practising course individually (mean score is 2,74), and in-service training courses have to be increased (mean score is 2,42) in order for teachers to improve themselves.Keywords; Tourism Training, Food and Beverage Service Department,Problems at Vocational Courses for Food and Beverage Service Department
