Abstract
ÖZ Bu araştırmada, Bursa Bölgesinde donmuş gıda üretimi yapan iki büyük firmanın 1990 yılı ürünlerinden çilek, kiraz, yeşil kabak, kırmızı biber ve karnabahar materyal olarak kullanılmıştır. Bu materyallerde, donma işleminde (-40°C) ve -25*5° C'de depqlama süresince birer aylık peryotlarla dokuz ay süre ile mikrobiyolojik, fiziksel ve kimyasal özelliklerinin değişimleri tespit edilmeye çalışılmıştır. Deneme tesadüf parselle rinde iki faktörlü deneme desenine uygun tarzda, 5 tekerrürlü olarak yürütülmüştür. Araştırma sonucunda, meyve ve sebzelerde mezofilik aerobik bakteri, maya-küf ve koliform bakteri sayıları donma işlemi sonucunda % -13* den % 82'ye varan oranlarda azalmış ve de polama süresince azalmaya devam ederek depolama süresi sonunda % 90-99. 8'e ulaşmıştır. Salmonella sadece kırmızı biberde bulunmuş ve depolama süresinde 2. aydan sonra, stafilokoka ise kırmızı biberde 6., diğer materyallerde 4. aydan sonra rastlanmamıştır. Fiziksel ve kimyasal özelliklerinde meydana gelen değişiklikler karnabaharda toplam asitlik hariç diğer tüm analiz sonuçlarında muamele komMnasy onları, firmalar ve depolama sü resi arasındaki farklılıklar % 1 ve % 5 düzeylerinde önemli bulunmuşlardır. IV ABSTRACT In this research, strawberry, cherry, pumpkin, red pepper and cauliflower which are of 1990 products of two `big companies manifacturing frozen food were used as material. The aim was to find out the changes of the microbiological, physi cal and chemical.characteristics during freezing operation^ -40 °C) and with one month intervals for a total of nine.-. months at -25*5°C freezing storage this material. The trial was con ducted in randomized plots two factors experimental design with 5 replicates. As a result of the study, it was found that numbers of mesophyllic aerobic bacteria, yeast-mold and coliform.bac teria wera_j?educecL by 13 % to 82 % due to the freezing process and went on decreasing during storage period and reached to 90-98 % at the and of the storage period. Salmonella was found only in red pepper but after 2. months of storage it disapeared whereas staphylococcus was not found in red pepper after s month and in other materials after 4 month. Changes in physi cal chemical characteristics and difference between treatment combinations, companies and storage periods were found signifi cant at. 1. % and 5 % probability levels except total acidity in cauliflower.
