Abstract
i ÖZET Bu araştırmada; model sistemlerde, taze ve dondurulmuş sığır etlerinin çeşitli emülsiyon parametreleri üzerinde yağ sıcaklığı, fosfat ve tuz seviyesi etkilerinin karşılaştırmalı olarak araştırılması amaçlanmıştır. Deneme, iki aşamada gerçekleştirilmiştir. Birinci aşamada; üç farklı yağ sıcaklığı (5 °C, 1 1 °C, 21 °C), üç fosfat seviyesi (%0.00, %0.50, %0.75) ve iki tuz seviyesinin (%2.50, %3.00) emülsiyon özellikleri üzerindeki etkileri araştırılmıştır, ikinci aşamada ise aynı muamele kombinasyonları, 0-4 °C'de 24 saat dinlendirildikten sonra, -24 °C'de dondurulmuş ve bu sıcaklıkta 20 gün süreyle muhafaza edilmiş etler üzerinde denenmiştir. Böylece, deneme 2x3x3x2 faktöriyel düzenleme şeklinde, tam şansa bağlı deneme planına göre düzenlenmiş, emülsiyon kapasitesi (EK) emülsiyondan ayrılan su oranı (ES-j), emülsiyondan ayrılan yağ oranı (ES2) ve emülsiyonun stabilite oranı (ES3) üç tekerrürlü, emülsiyon viskozitesi (EV) ise iki tekerrürlü olarak araştırılmıştır. Ayrıca emülsiyonun mikroskobik görünüşü için de, emülsiyon stabilitesi tayini için hazırlanan, pişirilmemiş emülsiyon örneklerinden, herbir muamele kombinasyonu için iki paralel halinde preparatlar hazırlanmıştır. Genelde yapılan varyans analizi ve Duncan çoklu karşılaştırma testi sonuçlarına göre istatistiki olarak önemli (P<0.01) bulunan araştırma sonuçları aşağıda özetlenmiştir. Taze etlere göre dondurulmuş etlerde EK %6.38 oranında artmış ancak bu etlerde ES3, %3.56 EV değeri de %10.50 oranında düşüş göstermiştir. 21 °C'ye göre 1 1 °C yağ sıcaklığında EK %4.50 artmış, fakat bu sıcaklıkta ES3 %3.74, EV de %12.24 oranında azalmıştır. 21 °C'ye göre 5 °C yağ sıcaklığında ise; EK ve EV önemli (P<0.01) derecede değişmemiş, ES3 %4.05 oranında azalmıştır. Kontrole göre %0.50 fosfat seviyesinde EK %8.50, EV %22.32 oranında, %0.75 seviyesinde ise; EK %10.40 EV de %26.98 oranında artmıştır. Her iki fosfatii seviyesinde de ES3 ortalama %3.82 oranında artmıştır, %0.5'e göre %0.75 fosfat seviyesinde ES3 'ün önemli (P<0.01) ölçüde değişmediği saptanmıştır. %2.50'e göre %3.00 tuz seviyesinde, EK %1.60 oranında artmış, ES3 %1.06 oranında azalmıştır. İki tuz seviyesi arasında EV'nin önemli (P<0.05) ölçüde değişmediği tespit edilmiştir. Emülsiyon preparatlarına ait fotoğrafların incelenmesi sonucunda; fosfat seviyesi arttıkça protein toplulukları kütlelerinin küçüldüğü, emülsiyonun daha homojen bir yapı kazandığı, yağların daha iyi emülsifiye edildiği belirlenmiştir. Emülsiyonun mikroskobik görünümü üzerinde, etin taze veya dondurulmuş olmasının, yağ sıcaklığının ve tuz seviyesinin herhangi bir etkisinin olduğu resimlerden görülememiştir. İÜ SUMMARY On the different emulsion parameters effect of fresh and frozen beef meat, added oil temperature.different phosphate and salt level were searched comparatively by using model system experiments. Experiment was carried out in two phases. In the first phase, effect of 3 different oil temperatures (5 °C, 1 1 °C, 21 °C), 3 phosphate (0.00 %, 0.50 % and 0.75%) and 2 salt (2.50 % and 3.00 %) levels were experimented on the emulsion characteristics of fresh beef meat matured 0-4 °C for 24 hours. In the second phase of the experiment, the effect of all these treatments were experimented by using the frozen meat samples which were matured like above and then frozen at -24 °C and stored at this temperature for 20 days. Emperiment was set up as 2x3x3x2 factorial arrangement of random experimental design. Emulsion capacity (EC), water (ES-) and oil (ES2) ratio accumulating after heating the emulsion and emulsion stability (ES3) ratio were searched in three replications, and emulsion viscosity (EV) was searched in two replications. Additionally, for the examination of the microscopic characteristics and apperances of the emulsions, parallel preparats were prepared from the emulsion of each treatment group of the emulsions. Generally istatistically significant (P<0.01) results of the variance analysis and Duncan's multiple range test findings were summariezed below. Comparel to the fresh meat, in the frozen meat EC was increased 6.38%, but ES3 3.56% and EV 1 0.50% were decreased. When compared to 1 1 °C oil temperature at 21 °C EC was increased 4.50 %, but contrarary ES3 3.74 % and EV 1 2.24 % were decreased. Considering the 21 °C and 5 °C oil temperatures, at 5 °C EC and EV were not changed statistically (P<0.01), but ES3 was decreased as 4.05 %. Comparing to the control group at 0.50 % phoshate addition EC 8.50 % and EV 22.32 %, at 0.75 % phosphate level EC 1 0.40 % and EV 26.98 % were increased. At theiv both phosphate level ES3 was increased average 3.82 %. ES3 values were not differed significantly (P<0.01) at these two phosphate levels. At the 3.00 % salt level EC values were increased 1.60 %, however ES3 were dropped 1.06 % compared to the 2.50 % salt level. EV values did not show significant (P<0.05) variations at these two levels. Carefull examination of the microscopic pictures of the emulsion preparats had indicated, that by the increases of the phosphate levels, sizes of the protein masses were decreased, more homogen emulsions were obtained and oil droplets were emulsified effectively. From the pictures, on the microscopic apperances of the emulsions any important effects of the different stages of the meat, oil temperatures and salt levels were not differentiated.
