Abstract
Bu ~aI15mada, TUrkiye'nin 10 degi~ik yöresinden temin edilen ballardasıcaklıgln diastaz aktivitesi ve hidroksilmetilfurfural miktarl Uzerindekietkisi araştlrlldl.Bu maksatla söz konusu ballar, beşer eşit kısma bölUndU. ilk kısımlaraslcakllk muamelesi uygulanmayarak kontrol grubu olarak klllanlldl.Diger d6rt klslm, slrayla 55 °C, 60 °C, 65 °c ve 70 °c slcakllklara2 saat sUreyle maruz blraklldl. Daha sonra oda slcakllglnda 48 saatbekletilip diastaz aktiviteleri ve hidroksilmetilfurfural miktarlarltaYln odildi. In this study, it has been examined the effects of temperature on diastaseactivity and amount of hydroxymethylfurfural in some honeycollected from ten different areas of Turkey.For this purpose, referred honey has been divided into equal portionsby five. Not having applied temperature process on the first portions,they have been used as control groups. The other four groups of portionsare heated in order 550e, 60oe,650e and 700e for two hours.Then,they have been waited for 48 hours at room temperature and then determinedof hydroxymethylfurfural amounts and diastase activities. Thesame samples have been waited for 1 month at room temperature anddetermined the same parameter again.It has been observed that, in honey taken at the beginning and thenin honey waited for 1 month respectively to the increasing temperature their diastase activities have decreased, and the amount.s ofhydroxymet.hlyfurfural have increased. It has been that the differencesamong the samples, times, temperatures as a result of variance analysisare very important (P <0,001). Tile correlation between tilediastase activities and the amounts of hydroxymethlyfurfural has notbeen encountered.
