Abstract
ÖZET Zayıf ve kuvvetli unlan değişik seviyelerde L-Askorbik asit (L-AA) ile katkılayarak farklı yoğurma ve fermentasyon sürelerinin hamur ile ekmek kalitesi üzerine etkisini araştırmak, mekanik olgunlaştırma ile ham unun uzun süre depolanma ihtiyacının ortadan kaldırılması ve fermentasyon süresinin kısaltılması amaçlanmıştır. Denemenin kuruluşunda faktör olarak; iki farklı un çeşidi zayıf ve kuvvetli un, 5 farklı L-AA katkı seviyesi (0, 20, 40, 60 ve 80 ppm), 5 farklı yoğurma süresi (5, 10, 20, 30 ve 40 dakika) ve 4 farklı son fermentasyon süresine (30, 35, 40 ve 45 dakika) yer verilmiştir. Kuvvetli unlardan yapılan ekmeklerde ekmek ağırlığı azalmış, hacim ve spesifik hacim artmış, ekmek içi gözenek yapısı olumlu yönde gelişmiş ve ekmek içinin daha geç bayatladığı tespit edilmiştir. Ekmek içinin beyazlığının göstergesi olan L renk değeri artmıştır. L-AA katkısı hacim ve spesifik hacim değerlerini artırırken, gözenek ve tekstür yapısına da olumlu yönde bir etkide bulunmuştur. Yine 40 ppm'e kadar L-AA ilavesi 24 saatlik ekmek içi yumuşaklık değerinde artışa sebep olurken, 60 ve 80 ppm'lik seviyeler düşüşe neden olmuştur. Hamurun yoğurma süresi arttıkça; ekmek ağırlığı azalmış, ancak hacim ve spesifik hacim ise artış göstermiştir. Ayrıca, ekmek içinin 24 ve 72 saat sonrası yumuşaklık değerlerinde bir artma izlenmiştir. En yumuşak ekmek içini 40 dakikalık yoğurma süresinden sonra pişirilen ekmekler vermiştir. Ekmek içinin beyazlığının bir göstergesi olan L renk değeri artmıştır. Son fermentasyon süresi arttıkça; ekmek hacmi, spesifik hacim ve hamurun son fermentasyon yüksekliğinde artma olmuş ve en düşük değeri 30, en yüksek değeri ise 45 dakikalık son fermentasyon süreleri vermiştir. Ayrıca, ekmek içinin 24 ve 72 saat sonrası yumuşaklık değerlerinde bir artış gözlenmiştir. Bu sonuçlara göre; zayıf unların durumunu iyileştirmek için, optimum seviyede oksidant katküamak kısmen yeterli olup, yoğurma süresi ve fermentasyon sürelerinin kısa tutulması gereği de ortaya çıkmıştır. Kuvvetli unların oksidantla katkılanması durumunda ise yoğurma süresinin artırılması ve uzun süre fermentasyona bırakılması ile yüksek hacimli, daha geç bayatlayan kaliteli ekmek üretimi mümkün olabilecektir. SUMMARY Determination of effects of the fermentation and different mixing times on the both dough and bread quality by addition of L-ascorbic acid in different levels into both weak and strong flours were the aim of this research. Also, the possibility of decreasing fermentation time and the necessity of long time storage of flour through mechanical development processes were the others objectives of this study. The factors of the trial were 2 types of flours weak and strong flours and 5 L- ascorbic acid levels (0, 20, 40, 60, 80 ppm) and 5 mixing times (5, 10, 20, 30, 40 min) and 4 different proof times (30, 35, 40, 45 min). The weights of the breads made from strong flour have decreased while the volume and specific volumes increased. In addition to better pore formation, the breads from strong flours were staled in longer time than the others. The L values of breads which indicate internal whiteness were also increased. The addition of L- ascorbic acid increased the volume and specific volume, and it affected the formation of pore and texture development positively. L- ascorbic acid addition at the level of 40 ppm increased the crumb softness of bread while both 60 and 80 ppm levels decreased in 24 hours. As the mixing time of dough increased volume and specific volume were increased while the weight of bread decreased. Also an increase in softest value of crumb in the both 24 and 72 hours was observed. The softest crumb was determined in breads made by mixing for 40 min The L value which indicates whiteness of the crumb was also increased. As the proof time increased, the bread volume, specific volume, height of the dough with proof fermentation have also increased. The lowest value of these properties were determined at 30 min while the highest values were at the 45 min of proof times. An appreciable softness value for the bread crumb at both 24 and 72 hours have also observed. In conclusion, the results of this research showed that mixing time and fermentation time should be short when the weak flour plus oxidants is used. However, it will be possible to produce better breads with higher volume and longer stalling period when the strong flours with oxidant and longer mixing time used.
