Abstract
ÖZET Pastörize sütün muhafazası sırasında riboflavin (B2 vitamini) ve C vitaminlerinin tahrip olmasında, farklı ışık kaynağı ve ışık şiddeti etkilerinin belirlenmesi, bu araştırmanın konusu olmuştur. Bu amaçla, çiğ inek sütü 72 °C de 15 saniye pastörize edilmiş ve 500 mi' lik steril saydam cam kavanozlara doldurulmuştur. Pastörize süt kavanozlarının her birisi 1100, 2400 ve 5800 lux şiddetlerindeki floresan ve normal ışık kaynaklan ile ışıklandırılan, bölümlere ayrılmış iki ayrı buzdolabına yerleştirilmiştir. Her iki buzdolabında iç ortam sıcaklığı 4±1 °C olarak tutulmuştur. Kontrol grubu olarak incelenen pastörize süt örnekleri, aynı sıcaklık derecesinde karanlık şartlarda muhafaza edilmiştir. Deneme süt örneklerinin B2 ve C vitaminleri miktarları muhafazanın 0., 6., 12., 24., 48., 72., 96. ve 120. saatlerinde analiz edilmiştir. Araştırma, Tam Şansa Bağlı Bloklar Deneme Desenine göre düzenlenmiş ve altı tekerrürlü olarak yürütülmüştür. Deneme pastörize süt ömeMerinin B2 ve C vitaminleri miktarları üzerine ışık kaynağı, ışık şiddeti, ışık kaynağı x ışık şiddeti, muhafaza süresi ile muhafaza süresi x ışık şiddeti interaksiyonlarmın etkileri önemli (PO.01) bulunmuştur. Karanlıkta saklanan süt örneklerinin B2 ve C vitaminleri içeriği, floresan ve normal ışıkta saklanan örneklerden daha yüksek bulunmuştur. Floresan ışıkta saklanan süt örneklerinin B2 ve C vitaminleri içeriği, normal ışıkta saklananlardan daha düşük bulunmuştur. Işık şiddeti yükseldikçe B2 ve C vitaminleri miktarlanndaki kayıplar artmıştır. Muhafaza süresi ilerledikçe, pastörize süt örneklerinin B2 ve C vitaminleri miktarları genel olarak azalmıştır. Araştırma sonucunda; B2 ve C vitaminleri kayıplarını en aza indirmek için, pastörize sütlerin üretiminden hemen sonra, ışık geçirmeyen ambalaj materyalleri ile ambalajlanarak buzdolaplannda satışa sunulması, saydam cam şişelerde satılıyorsa 1 100 lux şiddetini aşmayan ışık şartlarında muhafaza edilmesi ve floresan ışık yerine normal ışığın tercih edilmesi gerektiği ortaya konulmuştur. SUMMARY This study attempted to investigate the effects of different light sources and intensity of light on the destruction of vitamins riboflavin (vitamin B2) and C during the preservation of pasteurized milk. For this purpose, raw cow milk was pateurized at 72 °C for 15 seconds and put into 500 ml sterilized jars made of transparent glass. The jars filled with pasteurized milk were placed in two refrigerators which were divided into compartments. One of the refrigerators was lit by fluorescent light of 1100, 2400 and 5800 lux and the other by normal electrical light The temperature inside the refrigerators was kept at 4±1 °C. The samples of milk spared as control group were held in the dark at the same degree of temperature. The amount of B2 and C vitamins of the study group were analyzed 0, 6, 12, 24, 48, 72, 96 and 120 hours after the begining of the experiment. The experiments in the present study were carried out by randomized complete block design and were conducted with six replicates. The effects of the different light sources, intensity of light on the amount of vitamins B2 and C in the pasteurized milk samples were found to be significant (P<0.01). The amount of the vitamins B2 and C in the samples held in the dark appeared to be higher than that of the samples kept in fluorescent and normal electrical light. On the other hand, the amount of B2 and C vitamins in the milk which was held in fluorescent light seemed to be less than that of the milk kept under normal electrical light. It was also noted that the higher the intensity of the light, the more are the losses in the amount of B2 and C vitamins and the longer the holding time, the less is the amount of B2 and C vitamins. The analysis and evaluation of the results of the experiment showed that pasteurized milk should be delivered in light proof cartons or packs and kept in refrigerators right after the production in order to decrease the destruction of B2 and C vitamins. When it delivered in transparent glass bottles in should be kept under the light not over 1 100 lux intensity and normal electrical light should be preferred instead of fluorescent light.
