Abstract
ÖZET Doktora Tezi HIYAR TURŞUSU SALAMURASINDA KALSİYUM KLORİIR KULLANARAK TUZ KONSANTRASYONUNUN AZALTILMA OLANAĞI ÜZERİNE ARAŞTIRMA Erhan İÇ Ankara Üniversitesi Fen Bilimleri Enstitüsü Gıda Mühendisliği Anahilim Dalı Danışman: Prof. Dr. Fili/. ÖZÇELİK Jüri: Prof. Dr. Isıl FİDAN Prof. Dr. İsmet ŞAHİN Prof. Dr. Filiz ÖZÇELİK İki yıl süreli olarak gerçekleştirilen hu araştırmada, sertlik bakımından yüksek kalitede hıyar turşusu üretimi için en uygun Ca('l2 ve NaCI oranlarının belirlenmesi amaçlanmıştır. Bu nedenle, ilk yıl denge noktasında (I, %0.2, %0.4 CaCI2 + %3, %4, %5 NaCI + %0.2 asetik asit, ikinci yıl ise aynı bileşimlerde fakat CaCI2 oranı (t, %0.1, %tt.2 olan salamuralarda, hıyarların bir kısmında fermentasyon izlenmiş (29 gün), diğer bir kısmı ise 2-6 ay süreyle depolanmıştır. Denemeler süresince salamuralarda periyodik olarak titrasyon asitliği, pH, indirgen şeker, tuz analizleri ve mikrobiyolojik sayımlar yapılmış, fermentasyon ve depolama denemeleri tamamlandığında ise, hıyar turşularında sertlik ve bağlı Ca++ analizleri gerçekleştirilmiştir. Denemeler sırasında, bütün salamuralarda, laktik asit fermentasyonu genellikle 14. günde tamamlanmıştır. Bu araştırmada, CaCI2'ün doku sertliğinin korunmasına yardım ettiği; CaCl2 içeren hıyar turşularının başlangıç sertliklerini, fcrmentasyonlar sonunda %77.65-97.09 (ilk yıl) ve %75. 76-93.80 (ikinci yıl), 6 ay süren depolamalar sonunda ise, ilkyıl %79.76-91.80 ve ikinci yıl %66.57-87.70 oranlarında korudukları saptanmıştır. Bağlanan Ca` iyonu miktarı ile doku sertliği arasında herhangi bir korelasyon gözlenmezken; elde edilen sonuçlara göre, hıyar turşularının doku sertliğinin korunması için en uygun konsantrasyonların, fermentasyon sü-ecindc (29 gün) %0.2 CaCl2 + %4 NaCI + %0.2 asetik asit, depolama sürecinde (6 ay) ise %0.2 CaCI2 + %5 NaCI + %0.2 asetik asit olduğu belirlenmiştir. 2(10(1, l!7savfa Anahtar Kelimeler: Hıyar turşusu, sertlik, CaCI2, doğal fermentasyon, depolama ABSTRACT Ph. Therefore, one part of cucumbers was fermented (29 days) and the other part of cucumbers was stored (2-6 months) in brines containing equilibrum concentrations 0, 0.2%, (».4% CaCI2 + 3%, 4%, 5% NaCI + 0.2% acetic acid in first year. Second year, same brine compositions were used in experiments except CaCI2 (0, 0.1%, 0.2%). Brine solutions were assayed periodically for acidity, pH, reducing sugar, salt and microbiological populations during the experiment periods. After the experiments, firmness and bound Ca+t were determined in cucumber pickles. Generally, fermentation was completed on 14<h day in all samples during the experiments. The results indicated that, added CaCI2 helped to maintain cucumber firmness. In fermentation experiments, CaCI2 added samples had 77.65% - 97.09% (first year) and 75.76% - 93.80% in(second year) of cucumber firmness retention. Also, stored samples had 79.76% - 91.80% and 66.57% - 87.70% of cucumber firmness retention after 6 months storage. A correlation was not observed between bound Ca** amount and cucumber firmness. According to the obtained results, the optimum concentrations for retaining cucumber firmness in fermentation period (29 days) was 0.2% CaCI2 + 4% NaCI + 0.2% acetic acid ( in cquilibrum concentration ) and for stored pickles ( 6 months ) this combination was 0.2% CaCI2 + 5% NaCI + 0.2% acetic acid. 2000, 117 pages Key Words: Fermented cucumber, firmness, CaCI2, natural fermentation, storage IV
