Abstract
ÖZET Doktora Tezi KOYUN SÜTÜNDEN İŞLENEN BEYAZ PEYNİRLERDE İNEK SÜTÜ VARLIĞINI SAPTAMA DÜZEYİNİN BELİRLENMESİ Bedia ŞİMŞEK Ankara Üniversitesi Fen Bilimleri Enstitüsü Süt Teknolojisi Anabilim Dab Danışman: Prof. Dr.TümerURAZ 2003 İnek sütleri ile koyun sütünün karıştırılması peynir endüstrisinde sık karşılaşılan sorunlardan biridir. Beyaz peynir genellikle koyun sütünden olgunlaştırılarak üretilen bir çeşittir. Ancak piyasada koyun ve inek sütlerinin karışımı ile yapılan benzer tip peynirler de bulunmaktadır. Bu çalışmada Beyaz peynir üretiminde kullanılan süt türlerinin tanımlanmasında elektroforetik (SDS-PAGE ve nativ-PAGE) yöntemlerinin ayırma düzeyi incelenmeye alınmıştır. Peynirler koyun inek sütü karışımından (% 3, 5, 10, 20 ve 100) elde edilmiştir. Burada çiğ ve pastörize sütler, teleme ve 1, 30, 60, ve 90. günlük peynir örnekleri üzerinde çalışılmıştır. SDS-PAGE ve natrve-PAGE ile koyun sütlerinde inek sütü (çiğ ve pastörize) varlığı % 5 oranında tespit edilmiştir. Generally white (Beyaz ) cheese is a ripened product manufactured from pure sheep's milk; but some similiar type cheeses manufactured with mixtures of sheep's and cow's milk are on the marked In this study, we investigated the reliability of electrophoretic (SDS-PAGE and native-PAGE) methods for identification of the kind of milk used in cheese making. In this study the cheeses were manufactured from the mixes of cow's and sheep's milk (3, 5, 10, 20 and 100 %). For analytical purposes the following samples were taken: samples of mixtures of milk after mixing (raw and pasteurised); teleme; samples of each of the resulting cheeses after ripening 1, 30, 60 and 90 days. By SDS-PAGE and native-PAGE 5 % of cow's milk in sheep's milk (raw and pasteurised) and teleme were measurable.
