Abstract
Bu araştırmada, inek, manda, koyun ve keçi sütlerinden üretilen yoğurtların bazı fiziksel, kimyasal, mikrobiyolojik ve duyusal özellikleri incelenmiştir. Yoğurtların aroma bileşikleri incelenerek aromatik farklılıklarının ortaya konulmasına da çalışılmıştır. Araştırma sonuçlarına göre; süt çeşidi değişkeninin incelenen tüm kimyasal özellikler üzerine etkisi istatistiksel olarak çok önemli (p<0,01) bulunmuştur. Muhafaza süresinin etkisi ise, kül üzerine istatistiksel olarak önemli (p<0,05), diğer kimyasal özellikler üzerine ise çok önemli (p<0,01) bulunmuştur. Süt çeşidi değişkeninin etkisi, mikrobiyolojik özelliklerden S. thermophilus ve maya-küf sayıları üzerine istatistiksel olarak çok önemli (p<0,01), L. bulgaricus sayısı üzerine ise önemsiz (p>0,05) bulunmuştur. Muhafaza süresi değişkeni, S. thermophilus ve L. bulgaricus sayıları üzerine etkisi istatistiksel olarak çok önemli (p<0,01), maya-küf sayısı üzerine ise önemsiz (p>0,05) bulunmuştur. Süt çeşidi değişkeninin etkisi, incelenen duyusal özelliklerden koku, gaz oluşumu ve asitlik üzerinde ise istatistiksel olarak önemsiz (p>0,05), diğer özelikler üzerine ise çok önemli (p<0,01) bulunmuştur. Muhafaza süresinin etkisi ise tüm duyusal özellikler üzerine istatistiksel olarak çok önemli (p<0,01) bulunmuştur. Yoğurt örneklerinde uçucu bileşiklerin analizi SPME-GC/MS tekniği kullanılarak yapılmış ve yoğurtlarda 35 uçucu bileşik belirlenmiştir. Bu bileşiklerden yoğurdun temel aroma maddeleri olarak kabul edilen asetaldehit, diasetil ve asetoinin yanı sıra yoğurtların aromasına katkıda bulunan 32 uçucu bileşik daha (3 ester, 6 serbest yağ asidi, 4 keton, 5 terpen, 5 aromatik hidrokarbon, 5 alifatik hidrokarbon, 1 alkol, 1 aldehit, 1 sülfürlü bileşik ve 1 diğer) belirlenmiştir. Sonuç olarak; farklı sütlerden üretilen yoğurtların fiziksel, kimyasal, duyusal ve mikrobiyolojik özellikleri ve aroma profillerinin farklılıklar arz ettiği görülmüştür. Ayrıca, bu araştırma bu yönde yapılacak araştırmalara katkıda bulunması açısından önem taşımaktadır. In this study physical, chemical, microbiological and sensory properties of yoghurts produced from cow, buffalo, sheep and goat milks were examined. Aromatic differences of yoghurts were studied examining the aroma compunds of yoghurts. According to the study results, the effect of milk type variation on all of the chemical properties was found to be statistically highly significant (p<0,01). The effect of storage period on ash was found to be statistically significant (p<0,05), but the effect of storage period on the other chemical properties was statistically highly significant (p<0,01). The effect of milk type variation on the counts of S. thermophilus and yeast-mould was found to be statistically highly significant (p<0,01) but no significant effect of milk type was determined on the count of L. bulgaricus (p>0,05). The effect of storage period variation on the counts of S. thermophilus and L. bulgaricus was found to be statistically highly significant (p<0,01), but no significant effect of storage period was determined on the count of yeast-mould (p>0,05). There was no significant effect of milk type variation on the sensory properties which are odor, gase formation and acidity (p>0,05), while the effect of milk type on the other sensory properties was found to be statistically highly significant (p<0,01). The storage period effect on all of the sensory properties was found to be statistically highly significant (p<0,01). The analyses of the volatile compounds in yoghurt samples were done using the SPME-GC/MS tecnique and 35 volatile compounds were determined. It was determined that among these volatiles 32 volatile compounds (3 esters, 6 free fatty acids, 4 ketones, 5 terpenes, 5 aromatic hidrocarbon, 5 aliphatic hidrocarbon, 1 alcohol, 1 sulphurous compound and 1 other) as well as acetaldehyde, diacetyl and acetoin considered the major aroma compounds of yoghurt. Consequently, it was observed that physical, chemical, microbiological and sensory properties and aroma profiles of yoghurts produced from different milks were different. Besides, the study is important for contributing the other studies that will do about this subject in future.
