Abstract
Araştırmada 2010 yılı üç hasat döneminde (I.,II ve III. dönem) üretilen yeşil çayların (çeşit 1, çeşit 2, çeşit 3, çeşit 4, çeşit 5) fenolik madde (EGCG, EGC, ECG, EC, gallik asit, kafein) ve mineral madde (Cu, Fe, Zn, Mg, Ca, K, P) içerikleri incelenmiş ve bu parametreler üzerinde üretim yöntemi, hasat dönemi ve demleme süresinin etkileri araştırılmıştır. Yapılan analizlerde toplam fenolik madde miktarlarının I. hasat döneminden III. hasat dönemine doğru azaldığı tespit edilmiştir. Ayrıca yeşil çaylarda Cu, Mg, Ca, K miktarları III. hasat döneminde, P, Zn II. hasat döneminde, Fe ise I. hasat döneminde daha yüksek olduğu tespit edilmiştir. Hasat dönemi ve yeşil çay çeşidinin fenolik ve mineral madde içeriği üzerine etkisi istatistiki olarak önemli (p<0,01) bulunmuştur. Farklı demleme sürelerinde ise (1, 3, 5, 7 dak) demleme süresi arttıkça deme geçen madde miktarı artmıştır. Beş ve yedi dakikalık demleme sürelerinde fenolik ve mineral maddelerin deme daha fazla geçtiği tespit edilmiştir. Çay çeşitlerinin partikül büyüklüğü, deme geçen madde miktarı üzerinde etkili olmuştur. İnce partiküllü çayların deme geçen madde miktarları, aynı sürede kalın partiküllü çaylara oranla daha yüksek olmuştur. Yeşil çayların fenolik ve mineral madde içerikleri üzerine hasat, çeşit ve demleme sürelerinin istatistiki olarak etkisi önemli (p<0,01) bulunmuştur. In this study phenolic compounds (EGCG, EGC, ECG, EC, gallic acid, caffeine) and mineral contents (Cu, Fe, Zn, Mg, Ca, K, P) of 5 different green tea samples harvested in 3 plucking periods of 2010 were analysed and effects of tea production procedures, plucking and infusion peroids on these parameters were investigated. It was monitored that the amount of total phenolic compounds decreased from first plucking period to the third one respectively. Also in the first plucking period Fe content, in the second plucking period P and Zn contents, and in the third plucking period Cu, Mg, Ca, K contents of green tea types were determined higher than the other plucking periods.The effects of plucking periods and green tea types on phenolic compounds and mineral contents of samples were statistically significant at p<0.01. Among the different infusion periods (1,3,5,7 min.) the longer infusion period, the higher penetration rate was. It was determined that 5 and 7 minutes of penetration periods revealed the highest amount of soluble solid in tea infusions. Particle sizes of green tea types were effective on the amount of soluble solid in tea infusion. During the same infusion period, the amount of soluble solid of green tea types made up of small particles were detected higher than green tea types made up of big particles. Effects of tea types, plucking and infusion periods on phenolic compounds and mineral contents of green tea types were statistically significant at p<0.01.
