Abstract
Araştırmada, ısıl işlem görmüş sucuk üretiminde starter kültür kullanımının ürünün uçucu bileşikleri ve diğer bazı kalitatif özelliklerine etkisi incelenmiştir. Starter kültür olarak Lactobacillus sakei S15 ve Staphylococcus xylosus GM92 seçilmiş ve üç farklı sucuk hamuru (kontrol, L. sakei S15 ve L. sakei S15+S.xylosus GM92) hazırlanmıştır. Üretim, kontrollü şartlar altında gerçekleştirilmiştir. Fermantasyon (22°C'de 48 saat) ve ısıl işlem (68°C'lik iç sıcaklık) aşamalarından sonra örnekler kurutma işlemine tabi tutulmuştur. Sucuk hamurundan ve ayrıca fermantasyon, ısıl işlem ve kurutma işlemlerinden sonra alınan örneklerin uçucu bileşik profili ile mikrobiyolojik ve fiziko-kimyasal özellikleri belirlenmiştir. Son ürün ise duyusal özellikler yönünden test edilmiştir. Starter kültür kullanımı nem, pH, laktik asit bakteri, Micrococcus/ Staphylococcus, TBARS ve L* değeri üzerinde çok önemli (P<0,01) etki göstermiştir. Üretim aşaması ise nem, pH, laktik asit bakteri, Micrococcus/ Staphylococcus, TBARS ve L* değerleri üzerinde P<0,01, a* ve b* değerleri üzerinde ise P<0,05 düzeyinde etkili olmuştur. Starter kültür kullanımı tekstür ve koku parametreleri değeri üzerinde etkili olmazken (P>0,05), tat ve genel kabul edilebilirlik değerleri üzerinde çok önemli (P<0,01) farklılıklara neden olmuştur. En yüksek renk puanını L. sakei S15+S.xylosus GM92 karışık kültürü vermiştir. Sucuk örneklerinden toplam 66 bileşik (9 sülfürlü bileşik, 3 alkol, 4 keton, 7 alifatik hidrokarbon, 6 ester, 8 aldehit, 6 aromatik hidrokarbon, 1 furan ve 22 terpen) identifiye edilmiştir. Starter kültür kullanımı 14 bileşik üzerinde çok önemli veya önemli düzeyde etki göstermiştir. Buna karşın üretim aşaması faktörü daha fazla uçucu bileşik üzerinde etki göstermiştir. Kurutma aşmasında bileşiklerin seviyelerinde genellikle artışlar tespit edilmiştir. Anahtar Kelimeler: Isıl işlem görmüş sucuk, L. sakei, pH, TBARS, uçucu bileşik In this research, effects of using starter culture in heat-treated sucuk production on volatile compounds and some qualitative characteristics of the product were investigated. Lactobacillus sakei S15 and Staphylococcus xylosus GM92 were selected as starter cultures and three different sucuk doughs (control, L. sakei S15 and L. sakei S15+S.xylosus GM92) were prepared. Production was carried out under controlled conditions. Samples were subjected to drying process after fermentation (for 48 hours at 22°C) and heat treatment (68°C of inner temperature) stages. Volatile compound profile and microbiological and physico-chemical properties were determined using samples from sucuk doughs and samples taken after fermentation, heat-treatment and drying stages. Final product was tested for sensory properties. Use of starter culture had a very significant effect (P<0,01) on moisture, pH, lactic acid bacteria, Micrococcus/ Staphylococcus, TBARS and L* values. Production stage was effective on moisture, pH, lactic acid bacteria, Micrococcus/ Staphylococcus, TBARS and L* values at P<0,01, while it was effective on a* and b* values at P<0,05. While use of starter culture had no significant effects on texture and odor parameters (P>0,05), it had very significant effects on taste and general acceptability (P<0,01). Highest color score was observed in L. sakei S15+S.xylosus GM92 mixed culture. A total of 66 compounds (9 sulphur compounds, 3 alcohols, 4 ketones, 7 aliphatic hydrocarbons, 6 esters, 8 aldehydes, 6 aromatic hydrocarbons, 1 furan and 22 terpenes) were identified from sucuk samples. Use of starter culture showed very significant or significant effects on only 14 compounds. In contrast, production stage factor affected more compounds.
