Kırmızı biber, karabiber ve kimyonun bazı kimyasal özellikleri üzerine farklı dozda uygulanan gamma ışınlarının etkisi

Abstract
Araştırmada ticari önemi olan bazı baharatların gamma ışınlan ile muhafazasının baharatın kimyasal yapısı ve lezzet özellikleri üzerine etkileri incelenmiştir. Bu çalışma ile ülkemizde yaygın olarak tüketilen karabiber, kırmızıbiber ve kimyonun gamma ışınlan (5.0, 7.5 ve 10.0 kGy ) ile optimum ışınlama dozu belirlenmiş ve bu dozlardaki uygulamalar sonunda anılan baharatların kimyasal ve tat-koku niteliklerindeki değişimler kantitatif olarak incelemeye alınmıştır. Çalışma, 180 günlük depolama süreci içerecek şekilde, iki basamaklı olarak yürütülmüştür. I. grupta kimyon, kırmızıbiber ve karabiber EL grupta ise aynı orijinli olmak üzere yalnızca kimyon ve kırmızıbiber örnekleri incelemeye alınmıştır. Araştırmada örneklerin nem miktarları, uçucu yağ miktarları belirlenmiş ve uçucu yağlardaki lezzet bileşenlerinin yüzdesel oranlan ise, gaz kromotografisi ve kütle spektrometresi teknikleri kullanılarak incelenmiştir. Denemeler sonunda bazı lezzet bileşenlerinin oranlarında değişiklikler olmasına rağmen genel olarak gamma ışınlarının meydana getirdiği değişim miktarlarının önemli olmadığı saptanmıştır(p>0.05). İncelenen örneklerdeki nem miktarları başlangıç değerlerinin baharat standartlarına uygun olduğu ancak, uçucu yağ miktarları başlangıç değerlerinin ise baharat standartlarına uygun olmadığı belirlenmiştir. Depolama sonunda da nem değerlerin standartlarda öngörülen bu değerlerde kaldığı saptanmıştır. Yaptığımız çalışmalar sonucunda 5.0, 7.5 ve 10.0 kGy dozlarda ışınlamanın ürünün kimyasal yapışma ve lezzete yönelik kalitesine olumsuz etkisinin olmadığı belirlenmiştir. Uygulanan dozlar arasında istatistiksel olarak bir fark bulunamamıştır. Ancak tablo değerlerinin yorumlanması sonucu karabiber örnekleri için 7.5 kGylik ışınlama dozu anılan baharat için optimum doz olarak saptanmıştır. İncelemeye alman kırmızıbiber örnekleri sonuçlarından elde edilen verilere göre de bu baharat için optimum doz 10.0 kGy'dir. Diğer bir örneğimiz olan kimyon için saptanan optimum doz ise 7.5 kGyTik ışınlama dozudur.Çalışmamız sonuçlarına göre; uygun ambalaj ve depolama koşullan ile birlikte kullanılacak olan ışınlamanın, baharat kalitesini uzun süreli korumak için kullanılabilecek mevcut yöntemler içerisinde en uygunu olduğu ortadadır. Ayrıca, bu yöntemin mikrobiyolojik kalite üzerine olan olumlu etkileri ve böcek zararlılarına karşı ürünü koruduğu da düşünülürse kalitenin sağlanması ve korunması için gamma ışınlan ile muhafaza yönteminin uygulanması gerekliliği bir kez daha ortaya çıkmaktadır. The purpose of this research is to determine the use of gamma rays in the preservation of commercially valuable spices and their effect on the chemical compositions and flavour. Black pepper, red pepper and cumin, which are some of the most widely consumed spices in our country, have been subjected, to gamma rays at 5.0, 7.5, lO.OkGy doses. Optimum levels of exposure have been determined, and the effects of these exposures on the chemical quality and flavour have been examined quantitatively. The experiments which covers a 180 day storage period have been conducted on two groups. Cumin, red pepper and black pepper made up the first group, whereas the second group was comprised of only cumin and red pepper of the same origin. In the experiments, the moisture and volatile oil contents of the samples have been determined and percentages of flavour components of volatile oil were examined with gas chromatography and mass spectrometry techniques. Although differences in percentages of flavour components were observed on an overall basis, the differences caused as a result of exposure to gamma rays, were not statistically significant (p>0.05). In the samples that were examined, the initial moisture contents were in accordance with the spice standards whereas the volatile oil contents did not conform with the spice standards. At the end of the storage period, it was observed that the amount of moisture remained below the accepted levels indicated in the spice standards. The experiments showed that irradiation at 5.0, 7.5 and 10.0 kGy doses did not cause any undesirable effect on the flavour and chemical compositions of the spices. The differences between the applied irradiation doses were statisticallyVII insignificant. However, a closer examination of the experimental data indicated that the optimum irradiation level for black pepper was 7.5 kGy. On the other hand, the optimum levels of exposure for the red pepper and cumin samples were 10.0 and 7.5 kGy, respectively. This research showed that exposure to gamma rays along with proper packaging and storage is undoubtedly the safest method of preservation among the currently known methods. Taking into account the beneficial effects on the microbiological quality and the prevention of pest infestation, the use of gamma rays for food preservation purposes appears to be very important.
