Abstract
IV ÖZET Günümüzde hazır gıdalara ve daha sağlıklı ve ucuz bulunduğu için tavuk etine olan talep artmıştır. Bu çalışmanın amacı tüketime hazır et ürünlerinin hazırlanmasında ön aşama olan marinasyonun tavuk etinde ürün kalitesi üzerine etkilerini incelemektir. Hammadde olarak aynı anda kesilmiş tavuklardan alman göğüs etleri kullanılmıştır. Standard oranda su ve tuz (%4,0) ile farklı oranlarda laktik asit (%0-0,5-l,0) ve sodyum polifosfat (%0- 1,0-2,0) içeren marinadlar kullanılarak 3x3 deney düzeninde marinasyon yapılmıştır. Elde edilen yeni ürünlerin fiziksel ve kimyasal özellikleri su, tuz ve diğer katkıları içermeyen kontrol grubu ile karşılaştırılmıştır. Marinadda kullanılan laktik asit düzeyi artışı üründeki pH değerini düşürmüş, sodyum polifosfat düzeyi artışı ise üründeki pH değerini artırmıştır. Üründeki pH değeri de ürünün nem miktarını, su tutma kapasitesini, marinad absorbsiyon miktarını ve pişirme verimini doğru orantılı, toplam pişirme kaybını ise ters orantılı olarak etkilemiştir. Araştırma sonuçlarına göre tavuk etinde marinasyon ile pH değeri 5,90 'in üzerinde tutularak ürün kalitesi artırılabilir. Marinadda %4 oranında tuz, %0,5'den düşük oranda laktik asit ve % 1,0-2,0 oranında sodyum polifosfat kullanımı olumlu sonuçlar vermektedir. Ayrıca kaplama marinasyonun olumlu etkilerini artıracağından, tavuk etlerinde marinasyon sonrası kaplama önerilebilir. The objective of the present study was to investigate the effects of marination, which is the initial step for the manufacturing of ready-to-eat meat products, on the quality characteristics of the chicken breast meat. Raw material was the chicken breast meat taken from the chicken carcasses that were slaughtered simultaneously. Marination was performed in a 3x3 factorial experimental design by using marinades with standard amounts of water and salt (4.0%) and different amounts of lactic acid (0-0.5-1.0%) and sodium polyphosphate (0-1.0-2.0%). Physical and chemical properties of the products were contrasted with the control group that has no added water, salt, or other ingredients. Increased amounts of lactic acid in the marinade decreased pH value of the product while increased amounts of sodium polyphosphate increased pH value of the product. Moisture content, water holding capacity, marinade absorption, and cooking yield of the product increased linearly with increased pH while total cooking loss decreased linearly with increased pH. Results indicated that the quality characteristics of chicken breast meat could be improved by adjusting pH value of the product above 5.90 through marination. Marinade with 4% salt, 0.5% or less lactic acid, and 1.0-2.0% sodium polyphosphate concentrations gave positive results. In addition, battering following marination is recommended since it will increase positive effects of marination.
