Abstract
IV ÖZET Bu araştırmada, koyun ve manda etlerinin kimyasal kompozisyonu ve kürlemenin uçucu bileşenler üzerine olan etkisi gaz kromatografisi sonuçlarındaki geliş zamanlarına göre parmak izi olarak belirlenmiştir. Çalışmada, 10 farklı manda ve koyudan alman örnekler incelenmiştir. Örnekler kıyma haline getirildikten sonra iki gruba ayrılmış ve birinci grup kürlenmeden, diğer grup ise kürlenerek incelemeye alınmıştır. Araştırmada kürlenmemiş ve kürlenmiş örneklerin kimyasal kompozisyonu belirlenmiş ve uçucu bileşenleri ise headspace analizörü ekli gaz kromatografisinde incelenmiştir. Kürlenmemiş koyun örneklerinden elde edilen sonuçlar sırasıyla, % nem miktarı 75.91 ± 1.29; % protein miktarı 20.62 ± 0.80; % kül miktarı 1.08 ± 0.01; pH 5.85± 0.08; aw-değeri 0.982 ± 0.002; myoglobin miktarı ise 2.14 ± 0.34 mg/g olarak belirlenirmiş ve kürlenmiş koyun örneklerinde ise, % nem miktarı 74. 1 1+0.97; % protein miktarı 22.37 ± 1.38; %kül miktarı 1.54 ± 0.12; pH 5.99 ± 0.13; aw-değeri 0.975 ± 0.006; % tuz miktarı 1.40 ± 0.12; % nitrosomyoglobin dönüşümü 30.72 ± 9.42; kalıntı nitrit miktarı 16.32 ± 7.35 ppm olarak saptanmıştır. Kürlenmemiş manda örneklerinden elde edilen sonuçlar sırasıyla, % nem miktarı 76.30 ± 0.98; % protein miktarı 21.03 ± 1.22; % kül miktarı 0.95 ± 0.06; pH 6.01± 0.16; a değeri 0.992 ± 0.004; myoglobin miktarı ise 3.36 ± 1.18 mg/g olarak belirlenmiş ve kürlenmiş manda örneklerinde ise, % nem miktarı 74.61 ± 1.70; % protein miktarı 21.82 ± 0.90; % kül miktarı 1.46 ± 0.08; pH 6.08 + 0.12; aw-degeri 0.985 ± 0.006; % tuz miktarı 1.52 ± 0.18; % nitrosomyoglobin dönüşümü 14.83 ± 2.99; kalıntı nitrit miktarı 15.08 ±3.12 ppm olarak saptanmıştır.Headspace analizörü ekli gaz kromatografisi sonuçlan incelendiğinde piklerin geliş zamanlarına göre gruplar içindeki bütün örneklerin benzer olduğu ve kürleme ile uçucu bileşenlerin sayıca artığı ve konsantrasyonunun değiştiği gözlenmiştir. The experiments which covered 10 different samples of mutton and water buffalo meat have been examined. Firstly, the samples were ground. After that, the samples were separated into two groups. The first group were uncured and the others were cured. The chemical compositions of uncured and cured samples were determined and volatile compounds were examined in headspace analysis with gas chromatography. Result obtained from, uncured mutton samples have been determined respectively as follows; moisture content 75.91 + 1.29 %; protein content 20.62 ± 0.80 %; ash content.08 ± 0.01 %; pH 5.85 ± 0.08; water activity 0.982 ± 0.002; myoglobin content 2.14 ± 0.34 mg/g and cured mutton samples have been determined respectively as follows; moisture content 4.11 ± 0.97 %; protein content 22.37 + 1.38 %; ash content 1.54 ± 0.12 %; pH 5.99 ± 0.13; water activity 0.975 ± 0.006; salt content 1.40 ± 0.12 %; nitrosomyoglobin conversion 30.72 ± 9.42 %; nitrite residue content 16.32 + 7.35 ppm. Result obtained from, uncured water buffalo samples have been determined respectively as follows; moisture content 75.91 ± 1.29 %; protein content 21.03 ± 1.22 %; ash content 0.95 ± 0.06 %; pH 6.01 ± 0.16; water activity 0.992 ± 0.004; myoglobin content 3.36 +1.18 mg/g and cured water buffalo samples have been determined respectively as follows; moisture content 74.61 ± 1.70 %; protein content 21.82 ± 0.90 %; ash content 1.46 ± 0.08 %; pH 6.08 ± 0.12; water activity 0.985 ± 0.006; salt content 1.52 ± 0.18 %; nitrosomyoglobin conversion 14.83± 2.99 %; nitrite residue content 15.08 + 3.12 ppm.According to the elution time of the peaks which are obtained from the headspace with gas chromatography, its was observed that all of the samples in the same groups were similar and the volatile compounds increased with curing.
