Abstract
Bu çalışmada ekstrüzyon pişirme sırasında sistem parametreleri ve ürün formülasyonunda kullanılan ingredienlerin Maillard reaksiyonu üzerine etkileri araştırılmıştır. İndirgen şekerler (D-glukoz ve D-riboz), kabartma ajanları (sodyum bikarbonat ve amonyum bikarbonat), soya protein izolatı, asparajin, sitrik asit ve beyaz mısır unu kullanılarak farklı formülasyonlar hazırlanmıştır. Bu formülasyonlarla geleneksel ekstrüzyon ve CO2 enjeksiyonu yöntemleri kullanılarak farklı sistem parametreleri ile ekstrüzyon ürünleri üretilmiştir. Maillard reaksiyon ürünlerinden furozin, furfural, hidroksimetilfurfural (HMF) ve akrilamid seviyeleri takip edilmiştir. Ayrıca, formülasyon bileşenleri ve sistem parametrelerinin, ekstrüzyon ürünlerinin fiziksel özellikleri üzerine etkileri de incelenmiştir.D-glukoz yerine D-riboz'un kullanılması, ekstrüzyon ürünlerinde furozin içeriğinin azalmasına neden olmuştur. Buna ek olarak, sodyum bikarbonat ve amonyum bikarbonat ilave edilen ekstrüzyon ürünlerinde furozin içeriği önemli ölçüde azalmıştır. Sitrik asit ilavesi (1% w/w) furfural oluşumunu teşvik ederken, Uluslararası Kanser Araştırma Ajansı (IARC) tarafından ?insanlar için olası karsinojen? olarak sınıflandırılan akrilamidin oluşumunu önemli ölçüde sınırlandırmıştır. Bu çalışmada kullanılan kimyasal kabartma ajanlarından amonyum bikarbonat; furfural, HMF ve akrilamid içeriğini önemli ölçüde artırmıştır. Diğer kimyasal kabartma ajanı, sodyum bikarbonat da HMF ve akrilamid içeriğini önemli ölçüde artırmıştır, fakat bu artış daha düşük düzeydedir. Yüksek sıcaklık ve düşük besleme nem koşullarında 75 psi basınçta CO2 enjeksiyonu uygulaması ile üretilen ekstrüzyon ürünlerinin akrilamid içeriğinde %61 oranında bir azalma gözlenmiştir. Akrilamid oluşumu hem geleneksel ekstrüzyon hem de CO2 enjeksiyonu yöntemlerinde besleme nem içeriğinin %22'den %26'ya artırılmasıyla önemli ölçüde sınırlandırılmıştır, ancak CO2 enjeksiyonu yönteminin etkisi daha belirgin olmuştur. Akrilamid içeriğinde gözlenen bu dikkate değer azalma, yüksek besleme nem içeriğinde uygulanan CO2 enjeksiyonunun akrilamid oluşumunda dekarboksilasyon ve dehidrasyon basamakları üzerine bloke edici etkisi ile ilişkili olabilir. Bu çalışmada ayrıca, CO2 enjeksiyonu yönteminin düşük sıcaklık uygulamalarında ekstrüzyon ürünlerinde genişlemeyi teşvik ettiği, daha yüksek sıcaklıklarda ise tersi bir etkisinin olduğu gözlenmiştir. Bununla birlikte genişleme indeksi ve motor torku değerleri arasında pozitif bir korelasyon, genişleme indeksi ve yığın yoğunluğu arasında ise negatif bir korelasyon tespit edilmiştir. In this study, effects of system parameters and ingredients used in product formulations on Maillard reaction during extrusion cooking were investigated. Different formulations were prepared by using reducing sugars (D-glucose and D-ribose), chemical leavening agents (sodium bicarbonate and ammonium bicarbonate), soy protein isolate, asparagine, citric acid and white corn flour. These formulations were used to produce extrudates by conventional extrusion and CO2 injection methods at different system parameter settings. Among the Maillard reaction products, levels of furosine, furfural, hydroxymethylfurfural (HMF) and acrylamide were monitored. Furthermore, effects of formula ingredients and system parameters on physical properties of extrusion products were also investigated.Replacing D-glucose with D-ribose resulted in decreases in furosine contents of the extrusion products. Additionally, furosine contents significantly decreased in sodium bicarbonate and ammonium bicarbonate added extrudates. While the addition of citric acid (1% w/w) promoted the formation of furfural, limited the formation of acrylamide significantly which has been classified as a ?probably carcinogen to humans? by the International Agency for Research on Cancer (IARC). One of the chemical leaving agents used in the present study, ammonium bicarbonate increased the furfural, HMF and acrylamide contents significantly. The other one, sodium bicarbonate also increased the HMF and acrylamide contents significantly, but at a lower level. By application of CO2 injection at a pressure of 75 psi, a 61% decrease was observed in acrylamide content of the extrudates produced at high temperature and low feed moisture conditions. Acrylamide formation was significantly restricted by increasing the feed moisture content from 22% to 26% in both conventional extrusion and CO2 injection methods; however, the effect of CO2 injection method was more distinct. The observed considerable decrease in acrylamide content might be related to blocking effect of CO2 injection applied at high feed moisture content on decarboxilation and dehydration steps of acrylamide formation. Furthermore, in this study, it was observed that CO2 injection method stimulated the expansion in extrudates at lower temperature applications while a reverse effect was observed at higher temperatures. Moreover, there was a positive correlation between expansion index and motor torque value while a negative correlation was noted between expansion index and bulk density.
