Yabancı turistlerin Türk mutfağına ilişkin görüşleri: Ege bölgesi örneği

Abstract
Bu araştırma; tatilini geçirmek üzere Ege Bölgesine (İzmir, Muğla, Aydın) gelen ve konaklayan yabancı turistlerin Türk mutfağı ve yemeklerine ilişkin görüşlerini belirlemek amacıyla yürütülmüştür. Ege Bölgesinin çeşitli turistik tesislerine tatillerini geçirmek üzere gelen turistler arasından seçilen 3, 4, 5 yıldızlı otellerde konaklayan, en az üç geceleme yapmış olan, 18 yaş ve üzeri 510 (kadın:300, erkek:210) yabancı turist araştırmanın örneklemini oluşturmuştur. Veriler anket formu kullanılarak toplanmıştır. Araştırmaya katılan turistlerin ortalama yaşı 38.25±14.205 yıldır. Araştırmaya katılan turistlerin %68.4'ü Türk mutfağının yemeklerini daha önce tattığını, %93.1'i Türk yemeklerini beğendiğini, %81.2'si Türkiye'ye tekrar gelmeyi düşündüğünü belirtmişlerdir. Katılımcıların %53.3'ünün Türkiye'de bulundukları süre içinde Türk yemeklerini, %36.1'inin ise hem kendi ülkesinin yemeklerini, hem de Türk yemeklerini tercih ettikleri saptanmıştır. Araştırmaya katılan turistlerin Türk mutfağına ait yemeklerden en yüksek oranda tavuk yemeklerini (%88.4) yedikleri saptanmış olup, bunu sırasıyla içecekler (%85.9), salatalar (%82.4), et yemekleri (%81.6), çorbalar (%80.0), pide çeşitleri (%79.6), börekler-hamur işleri (%78.2) izlemiştir. Turistlerce en düşük oranda yenilen yemeğin kurubaklagil yemekleri (%54.3) olduğu belirlenmiştir. ?Türk mutfağının yemekleri daha az yağlı olmalı? ifadesine katılanların (%45.3); Türk mutfağının yemekleri daha az salçalı (%41.2), daha az tuzlu (%36.7), daha ucuz (%41.4), daha sağlıklı olması (%37.6) ile ilgili kararsız olanların; daha çok sebzeli (%46.7) daha temiz (%37.6) olmalı ifadelerine ise katılmayanların oranı en yüksektir. Türk Turizmi ve Türk Mutfağının hak ettiği yere gelmesi için geniş kapsamlı tanıtımların yapılması gerekmektedir. This study was carried out to determine the opinions of foreign tourists who arrive and stay in Aegean Region (Izmir, Mugla, Aydin) for holiday about Turkish cuisine and foods. The study sample included a total of 510 foreign tourists (female:300 and male:210) selected among tourists who arrive in different touristic facilities in Aegean Region to spend their holidays, stay in 3-, 4- and 5-star hotels and at least stay for three days and are 18 and over years old. Data were obtained through a questionnaire form. The mean age of the tourists participating in the study was 38.25±14.205 years. More than half of the participant tourists (68.4%) stated to have already eaten Turkish cuisine, 93.1% of them stated to like Turkish foods, and 81.2% considered coming to Turkey again. It was determined that more than half of the participants (53.3%) consumed Turkish foods during their stay in Turkey, while 36.1% preferred to eat both Turkish and their own countries? foods. Participant tourists were determined to most prefer chicken dishes (88.4%), which was followed by beverages (85.9%), salads (82.4%), meat dishes (81.6%), soups (80.0%), pita varieties (79.6%), and pie-pastry (78.2%). On the other hand, tourists were determined to least prefer dry bean dishes (54.3%). The highest rates determined in the study appertained to those agreeing that Turkish cuisine should be less fatty (45.3%); those who were undecided that Turkish dishes should be less sauce (41.2%), less salt (36.7%), cheaper (41.4%) and healthier (37.6%); and those who did not agree that Turkish cuisine should be more vegetable (46.7%) and cleaner (37.6%). More comprehensive presentations should be organized for Turkish Tourism and Turkish Cuisine to take their rightful places in the world.
