Abstract
Bu çalışmada, partikül madde örneklemeleri, Kocaeli'nde, odun kömürü ile pişirme işlemi gerçekleştiren 14 restoranda, 5 aşamalı Sioutas sıralı örnekleyici kullanılarak gerçekleştirilmiştir. Örneklemeler sonucunda belirlenen partikül madde konsantrasyonları ve elementel kompozisyonları, 5 farklı boyut aralığı (PM>2.5, PM1.0-2.5, PM0.5-1.0, PM0.25-0..5 ve PM<0.25) için değerlendirilmiştir. ICP-MS ile 24 elemente ait konsantrasyonlar ölçülmüş; analizler sonucunda, element konsantrasyonları kullanılarak; restoranlarda çalışan personelin, pişirme sırasında oluşan ince partiküllere ve içerdikleri toksik metallere soluma yolu ile maruziyeti sonucu olası sağlık riskleri hesaplanmıştırHer bir boyut aralığındaki partiküllerin ortalama konsantrasyonları ve standart sapmaları sırasıyla 42,54 ± 1,74, 18,59 ± 9,87, 16,33 ± 9,48, 69,96 ± 50,73 ve 130,17 ± 101,95 µg/m3 olarak bulunmuştur. İnsan sağlığı açısından riskli grup olan ince partiküllerin (PM2.5) %55'ini, 0,25 µm ve daha küçük boyutlu partiküllerin (PM<0.25) oluşturduğu belirlenmiştir.Elementel analiz sonucunda, PM2.5 partikül boyutunda en yüksek konsantrasyonlarda bulunan iz elementler V, Se, Zn, Cr ve As olarak belirlenmiştir. Elementlerin kaynaklarının belirlenmesi amacıyla temel bileşen analizi (PCA) gerçekleştirilmiş ve restoranlarda oluşan ince partiküllerin, 4 bileşenden etkilendiği sonucuna varılmıştır. Bu bileşenler sırasıyla; odun kömürü yakılması, iç ortam aktiviteleri (mutfak), toprak metalleri ve yol tozu olarak tanımlanmıştır. Olası sağlık riskleri ile ilgili yapılan değerlendirmeler sonucunda, toplam tehlike indeksinin, kabul edilebilir değerin (1,0) yaklaşık 4 katı olduğu belirlenmiştir. Hayat boyu kanser olma riskinin, sınır değerin oldukça üstünde olduğu; özellikle As ve Cr(VI) elementlerinden kaynaklanan, hayat boyu kanser olma risklerinin dikkate alınması gerektiği sonucuna varılmıştır. In this study, particulate matter samples were collected from 14 restaurants that cooked with charcoal in Kocaeli, the second most populated city in Turkey. A 5-stage Cascade Impactor was used for sampling, and a total of 24 elements were quantified with ICP-MS. Particulate matter concentrations and elemental compositions were evaluated for 5 different particle size (PM>2.5, PM1.0-2.5, PM0.5-1.0, PM0.25-0..5 ve PM<0.25). The health risks of the individual metals were calculated to assess the potential health risks associated with inhaling the fine particles released during charbroil cooking.The average concentrations and standard deviations of particles which are 5 different sizes were found as 42.54 ± 1.74, 18.59 ± 9.87, 16.33 ± 9.48, 69.96 ± 50.73 ve 130.17 ± 101.95 µg/m3; respectively. It was concluded that PM<0,25 particles which are smaller than 0,25 µm constituted 55% of fine particles (PM2.5) which are hazardous for human health.The major trace elements identified in the PM2.5 particle size fraction were found as V, Se, Zn, Cr and As (in descending order). Principle component analysis (PCA) was used to determine the sources of PM2.5 and four factors (charcoal combustion, indoor activities (kitchen), crustal metals and road dust) were identified by PCA. According to the health risk assessment, the total HQ was 4 times greater than the acceptable limit (1.0). ELCR was also found as higher than acceptable limit and among the carcinogenic elements, the cancer risks resulting from As and Cr exposure were the highest. Overall, these results indicated that the lifetime cancer risk that is associated with As and Cr(VI) exposure is significant at selected restaurants, which may cause adverse health effects for restaurant workers.
