Abstract
Bu araştırmada, ülkemizde yağlı gıdaların ambalajlanmasında yararlanılan plastik materyallerin toplam migrasyon testleri, üç farklı simulantın kullanıldığı yöntemlerle gerçekleştirilmiştir. Bunlar: Yağlı gıda simulantı olarak zeytinyağının kullanıldığı CEN standart yöntemi ile alternatif yağlı gıda simulantı olarak izooktan ve %95'lik etanolun kullanıldığı yöntemlerdir. Bu çalışmada amaç, alternatif simulant olan uçucu nitelikteki izooktan ve %95'lik etanolun zeytinyağı yerine alternatif olarak uygunluk derecesini araştırmaktır. Sıvı yağ, margarin, peynir gibi yağlı gıdaların ambalajlanmasında kullanılan altı (üç adet PET, PA/LDPE, PA/EVA/LDPE ve PP) plastik materyal, zeytinyağında 40°C'de 10 gün, izooktanda 40°C'de 2 saat süre ile ve %95'lik etanolde PET türü materyaller için 50°C'de 24 saat, diğerleri için 40°C'de 24 saat toplam migrasyon testlerine tabi tutulmuşlardır. Sonuçlar zeytinyağı ile sağlanan sonuçlarla karşılaştınldığında: Tüm materyaller (PET, PA/LDPE, PA/EVA/LDPE ve PP) için izooktanın zeytinyağı yerine kullanılabileceği; ancak %95'lik etanolun sadece PET ve PA/LDPE için uygun olduğu, diğer materyaller için ise kullanılamayacağı sonucuna varılmıştır. Anahtar Sözcükler: Alternatif simulantlar, toplam migrasyon, izooktan, %95'lik etanol In this thesis, total migration tests of plastic materials used in packaging of fatty foods were carried out by different procedures in which three different simulants were used. These were: CEN standard procedure, where olive oil was used as fatty food simulant; the other procedures, where isooctane and 95 % ethanol were used as alternative fatty food simulant. The purpose of this thesis is to investigate the suitability of alternative volatile simulant, isooctane and 95 % ethanol instead of olive oil. Total migration tests were applied to six different plastic materials (namely three PET, PA/LDPE, PA/EVA/LDPE and PP) used in packaging of fatty foods such as oil, margarine and cheese. These plastic materials were hold in olive oil at 40°C for 10 days, isooctane at 40°C for 2 hours and PET materials were hold in 95 % ethanol at 50°C for 24 hours, others at 40°C for 24 hours. When the results were compared with that of olive oil, isooctane could be used instead of olive oil for all plastic materials (PET, PA/LDPE, PA/EVA/LDPE and PP); however 95 % ethanol was found to be suitable only for PET and PA/LDPE, not for other materials.
