Doğal antioksidan katkılı yenilebilir filmlerin köfte tipi et ürünlerinde kullanımının araştırılması

Abstract
Bu çalışmada peynir suyu proteininden hazırlanan defne ve adaçayı ekstraktı katkılı yenilebilir filmlerin köfte tipi et ürünlerinde oksidasyon stabilitesi üzerine etkileri araştırılmıştır. Bu amaçla 2 farklı konsantrasyonda (%2 ve %4) defne veya adaçayı ekstraktı içeren, peynir altı suyu proteininden elde edilen yenilebilir filmler fırında merkez sıcaklığı 72°C?ye ulaşana dek pişirilmiş köftelere sarılarak uygulanmıştır. Çalışmada ayrıca ekstrakt ilave edilmeyen yenilebilir film grubu ve film uygulanmayan kontrol grubu oluşturulmuştur. Örnekler soğuk depolama da 2°C?de 7 gün ve dondurarak depolamada -18°C?de 60 gün süreyle depolanmış, depolama boyunca soğuk depolamada 1. , 4. , 7. günlerde dodurarak depolamada ise 15 günlük dönemlerle köfte örneklerinin birincil ve ikincil oksidasyon ürünleri belirlenmiştir. Defne veya adaçayı ekstraktı katkılı yenilebilir filmlerin köftelerde yağ oksidasyonu üzerine yavaşlatıcı etkisi olduğu gözlenmiştir. Adaçayı ekstraktı katkılı yenilebilir filmlerle sarılan köftelerin TBA değerinin ekstraktsız yenilebilir film uygulanmış köftelere göre daha düşük olduğu saptanmıştır. Defne ekstraktlı yenilebilir filmlerle sarılan köftelerin antiradikal aktivite değerinin adaçayı ekstraktı katkılı gruplar ve kontrol gruplarına göre daha yüksek sonuçlar verdiği saptanmıştır. Ekstrakt eklenen filmlerle muamele edilen grupların toplam fenolik madde içeriği, ekstraktsız gruplara göre daha yüksek bulunmuştur. Bu tez çalışmasının bulguları, oksidasyonunun geciktirilmesinde doğal antioksidan katkılı yenilebilir filmlerin kullanılabilme potansiyelini göstermiştir. In this study, the effects of edible films obtained from whey protein containing laurel and sage extract on oxidation stability in meatballs were investigated. For this purpose, the edible films made by whey protein, that includes two different concentrations of laurel or sage extract (2% or 4%) were rolled onto the meatballs and oven-cooked until the central temperature reached 72°C. Additional to these groups, an edible film group without containing extracts and a control group without containing any edible films were prepared. The samples were stored at 2°C for 7 days for cold storage, and at -18°C for 60 days for frozen storage. During the storage period, the primary and secondary oxidation products were determined at 1st, 4th and 7th days in cold storage and every 15 days at frozen storage. It was observed that, the edible films with laurel and sage extracts had delaying effect on lipid oxidation. TBA values of the meatballs with sage extract containing edible films were lower than the TBA values of the meatballs with no extract added films. It was determined that the meatballs with laurel extract containing edible films have higher antiradical activity compared with the meatballs with sage extract containing edible films and control groups. Total phenolic compound content were higher in extract added edible film treatment groups than no extract added edible film treatment groups. The results of this thesis showed the application potential of edible films containing natural antioxidants in delaying oxidation in meat products.
