Abstract
Bu çalışmanın amacı Dairy Lo® ve inulin yağ ikame maddeleri kullanımının yağsız kefir kalite kriterleri üzerine etkisini ve ürünlerdeki akış tiplerini belirlemektir. Yağsız inek sütlerine Dairy Lo® (% 2) ve inulin (% 2) ilave edilmiştir. Kefir kültürü inokülasyonuyla (% 2) pH 4,6'ya kadar 25°C'de fermente edilmiştir. Duyusal analizler depolamanın birinci gününde; reolojik, mikrobiyolojik, fiziksel ve kimyasal analizler 1, 7, 14 ve 21. günlerde yapılmıştır.Örneklerde % toplam kuru madde ve yağ, pH değerleri, titrasyon asitliği, % toplam protein belirlenmiştir. Tepe boşluğu gaz kromatografisi metoduyla tat-aroma bileşenleri belirlenmiştir. Toplam laktobasil; laktokok, maya ve koliform bakteri sayısı incelenmiştir. Duyusal özellikler Tanımlayıcı Analiz ve Hedonik Testlerle belirlenmiştir. Reolojik özellikler Brookfield DV-II Pro LV model viskozimetre kullanılarak ölçülmüştür.Tam yağlı sütten üretilen kefir (TY), Dairy Lo® içeren kefir (DL), inulin içeren kefir (İNU) ve yağsız sütten üretilen kefir (YK) örneklerinde kuru madde, pH, laktik asit eşdeğerinde titrasyon asitliği sırasıyla % 8,6-10,9; 4,29-4,40 ve % 0,70-0,82 aralıklarında bulunmuştur. Toplam protein % 3,26-5,86 arasında bulunmuştur. Asetaldehit konsantrasyonları 5,2-7,16 mg/L, etanol konsantrasyonları 151-1075 mg/L arasında tespit edilmiştir.Depolamanın birinci gününde, görünür viskozite TY örneğinde 977 mPas ile en yüksek, İNU örneğinde 528 mPas ile en düşük bulunmuştur. Kefir örnekleri tiksotropi ile Newtonian olmayan pseudoplastik akış davranışı göstermiştir.Bütün örneklerde Lactobacillus spp. sayısı 9,1-9,4; Streptococcus spp. sayısı 9,3-9,8; maya sayısı 5,3-5,6 log (kob/ml) arasında bulunmuştur.Duyusal değerlendirmedeki renk, viskozite, ağzı kaplama, genel değerlendirme ve hedonik test kriterlerinden TY diğer örneklerden önemli farklılıkta yüksek puanlar almıştır (P<0,01).Bu çalışmayla, sağlık üzerine olumlu etkisi kanıtlanan kefirin yağsız üretiminde çeşitli fonksiyonel özelliklere de sahip olan yağ ikame maddeleri kullanımının daha sağlıklı bir ürün oluşumuna katkı sağlayabileceği tespit edilmiştir. The purpose of the study was to determine the effects of fat replacers; Dairy Lo® and inulin on kefir quality criteria and to investigate the rheological behaviours of the products. Dairy Lo® (2 %) and inulin (2 %) were added to non-fat cow?s milk. Kefir culture (2 %) was inoculated and they were incubated at 25 °C until pH 4.6. Sensory analysis was carried out on the first day of storage and rheological, microbiological, physical and chemical analyses were carried out on the 1, 7, 14 and 21th days.In samples, total dry matter % and fat %, pH values, titratable acidity, and total protein % were determined. Flavor analysis of kefir samples was determined with head space gas chromotagraphic method. Total Lactobacillus spp., Streptococcus spp., yeast and coliform bacteria counts were investigated. Sensory properties were determined with descriptive analysis and hedonic tests. Rheological properties were measured with using Brookfield DV-II Pro LV model viscosimeter.In kefir produced from whole fat milk (TY), kefir containing Dairy Lo® (DL), kefir containing inulin (INU) and kefir produced from non-fat milk (YK) samples, dry matter, pH values, titratable acidities equivalent to lactic acid were detected in ranges of 8,6-10,9 %; 4,29-4,40; 0,70-0,82%, respectively. Total protein were determined in range of 3,26-5,86 %. Acetaldehyde concentrations and ethanol concentrations were detected in range of 5,2-7,16 mg/L and151-1075 mg/L.In 1st day of storage, apparent viscosity had the highest value in TY sample with 977 mPas, the lowest value in INU sample with 528 mPas. All of the kefir samples had non-Newtonian behavior pseudoplastic fluid with thixotropy.In all samples, Lactobacillus spp., Streptococcus spp. and yeast counts were recorded between 9,1-9,4; 8,9-9,8l; 5,3-5,6 log (cfu/ml) respectively.In the sensory assesment, TY sample got higher scores than other samples according to color, viscosity, mouth coating, general evaluation and hedonic test results on significant difference (P<0,01).By this study, using of fat replacers which have various functional properties at non-fat production of kefir which is proved positive effects on health was determined to contribute a more healthy product formation.
