Doğal bitki ekstraktlarının yumuşak jöle tipi şekerlemede fizikokimyasal ve duyusal özellikler üzerine etkileri

Abstract
Şekerleme sektörü son zamanlarda artan diyabet sorunu, kilo alımı, günlük diyet ile yeterince besin bileşeni alamama gibi sağlık sorunları sebebiyle fonksiyonellik çalışmalarının hız kazandığı bir alandır. Bu çalışmada, jöle tipi yumuşak şekerlemede, prebiyotik özellikli oligofruktoz ve sorbitol; sakkaroz ve glukoz şurubu ile belli oranlarda ikame edilerek şeker oranı azaltılmıştır. Fonksiyonel özelliğin geliştirilmesi amacıyla bazı bitkisel ekstraktlar (çörek otu, meyan kökü, propolis, üzüm çekirdeği, zerdeçal ve zeytin yaprağı) da ilave edilmiştir. Şekerleme örneklerinin fizikokimyasal ve duyusal özellikleri (renk, görünüş, koku, tat/lezzet, ağızda bıraktığı tat ve dişe yapışkanlık); kurumadde, pH, su aktivitesi (aw), enzimatik olmayan esmerleşme, titrasyon asitliği, toplam fenolik bileşen içeriği, DPPH radikal tutucu aktivite, tekstür, renk ve duyusal analiz yapılmıştır. Jöle tipi yumuşak şekerleme üretiminde sakkaroz ve glikoz şurubuyla ikame edilen oligofruktoz, sorbitol ve bitkisel ekstraktların, şekerlemenin fiziksel, kimyasal ve duyusal özellikleri üzerindeki etkileri kabul edilebilir seviyede olmuştur. Zeytin yaprağının meyan köküne göre daha yüksek miktarda fenolik bileşen kazandırdığı görülmektedir. Üzüm çekirdeği ekstraktının, çörek otu ve zeytin yaprağına göre fenolik içeriği daha yüksek bulunmuştur. Çörek otu ve üzüm çekirdeği diğer ekstraktlara göre daha kuvvetli acı tada sahiptir. Tat/lezzet açısından çörek otu başta olmak üzere, meyan kökü ve propolis ekstraktları tek başına kullanıldıklarında beğenilmiştir. Ekstraktların beraber kullanımlarında çörek otu ve propolis karışımı tat/lezzet açısından en fazla beğenilen karışım olmuştur. Ekstrakt ilavesi ile şekerlemelerin duyusal analizinde kontrole göre renk ve görünüşündeki beğeni azalmıştır. Şekerlemede oligofruktoz ve sorbitol beraber kullanıldığında kontrole göre aw ve enzimatik esmerleşme artmış; daha sert, esnekliği düşük bir yapı elde edilmiş ve tat/lezzet olarak daha çok beğenilmiştir. The confectionery sector is an area where functionality studies are accelerating due to health problems such as diabetes problem, weight gain, daily diet and not getting enough nutrients. In this study, prebiotic oligofructose and sorbitol; sucrose and glucose syrup were replaced with certain amounts of sugar. Some vegetable extracts (black seed, licorice root, propolis, grape seed, turmeric and olive leaves) were also added to improve the functional properties. Physicochemical and sensory properties of confectionery samples (color, appearance, smell, taste / flavor, taste left in the mouth and tooth adhesion); dry matter, pH, water activity (aw), non-enzymatic browning, titration acidity, total phenolic component content, DPPH radical scavenging activity, texture, color and sensory analysis were performed. The effects of oligofructose, sorbitol and vegetable extracts substituted with sucrose and glucose syrup on the physical, chemical and sensory properties of the confection were acceptable in the production of jelly soft candies. It is seen that olive leaves give higher amount of phenolic compounds than licorice. The phenolic content of grape seed extract was higher than that of black seed and olive leaf. Black seed and grape seed have more bitter taste than other extracts. In terms of taste / flavor, especially black seed, licorice and propolis extracts were used when used alone. Mixture of black seed and propolis mixture was the most preferred in terms of taste / flavor. With the addition of extract, the sensation of color and appearance was decreased compared to the control in sensory analysis of candies. When oligofructose and sorbitol were used together in confection, aw and enzymatic browning increased compared to control; a harder, less flexible structure was obtained and the taste / flavor was more appreciated.
