Abstract
Bu çalışmada mandarin dilimlerinin kurutulmasında kurutma sıcaklığı (60-80 °C) , dilim kalınlığı (4-8 mm) ve kurutma hava hızının (1-2 m/s) etkisi belirlenmiştir. Box-Behnken deneme desenine göre 5 merkez nokta ve 12 kurutma koşuluyla toplam 17 kurutma yapılmıştır. Kurutulmuş ürünlerde kuruma süresi 137-1095 dakika, askorbik asit 110.85-202.03 mg/100g kurumadde (KM), fenolik madde 3220.16-5315.64 mg gallik asit eşdeğer (GAE)/100g KM, antioksidan kapasite 11.3235 – 14.3987 % DPPH (2,2-Difenil-1-pikrihidrazil), flavonoid madde 359.749 – 746.657 mg/100 g KM, toplam karotenoid madde 0.074 – 0.136 mg/100g KM, hidroksimetil furfural (HMF) 72.07 – 1103.31 ppm, L* değerleri 57.44 – 73.05, a* değerleri 7.28 – 15.00, b* değerleri 22.87 – 47.98.00 ve esmerleşme indeksi 0.80 – 0.98 değerleri arasında tespit edilmiştir. Bağımlı değişkenlerden kuruma süresi, askorbik asit, fenolik madde ve HMF model olarak önemli (p<0.001) bulunurken diğer bağımlı değişkenler önemsiz (p>0.05) bulunmuştur. Optimizasyon sonuçlarında kurutma sıcaklığı 60.95 °C, dilim kalınlığı 4 mm ve kurutma hava hızı 2 m/s olarak, askorbik asit ve fenolik madde sırasıyla 183.33 mg/100 g KM ve 5505.46 mg gallik asit eşdeğer (GAE)/ 100 g KM, kuruma süresi ve HMF içeriği de sırasıyla 484 dakika ve 127.16 ppm olarak belirlenmiştir. Mandarin dilimi kurutmada kuruma süresinin kısa, değerli bileşenlerin yüksek (askorbik asit ve fenolik madde) ve HMF içeriğinin düşük olması için kurutma sıcaklığının düşük, dilim kalınlığının az ve kurutma hava hızının yüksek olması gerektiği belirlenmiştir. In this study, it was determined the effect of drying temperature (60-80 °C), slice thickness (4-8 mm) and drying air velocity (1-2 m / s) on the drying of mandarin slices was determined. According to the Box-Behnken experimantal design, a total of 17 drying experiments was done with 5 central points and 12 drying conditions. The drying time, ascorbic acid, phenolic content, antioxidant capacity, total flavonoid and carotenoid, hydroxymethyl furfural (HMF), L*, a*, b* and browning index (BI) of the dried products were determined in the ranges between 137-1095 minutes, 110.85-202.03 mg / 100g dry matter (KM), 3220.16-5315.64 (GAE)/100g KM, 11.3235-14.3987% DPPH (2,2-Diphenyl-1-picrylhydrazyl), 359.749-746.657 mg/100g KM, 0.074 - 0.136 mg/100g KM, 72.07-1103.31 ppm, 57.44 - 73.05, 7.28 - 15.00, 22.87 - 47.98.00 and 0.80 - 0.98, respectively. Dependent variables were drying period, ascorbic acid, phenolic substance and HMF in the model (p <0.001), while other dependent variables were not in significant (p> 0.05). The results of the optimization showed that the ascorbic acid and phenolic substances were 183.33 mg/100g KM and 5505.46 mg gallic acid equivalent (GAE) / 100 g KM, respectively at a drying temperature of 60.95 °C, a slice thickness of 4 mm and a drying air velocity of 2 m/s. Drying time and HMF contents were determined as 484 minutes and 127.16 ppm respectively. It was determined that drying temperature should be low, slice thickness should be low and drying air speed should be high in order to have short drying time, high value components (ascorbic acid and phenolic matter) and low content of HMF content.
