Abstract
ÖZET Mikrodalga ile Isıtmada Isı ve Nem Transferinin İncelenmesi Bu çalışmada, su ve deri örnekleri kullanılarak mikrodalga ile ısıtmada ısı ve nem transferi incelenmiştir. Bu incelemenin yapılabilmesi için bir mikrodalga fırın tasarlanmış, gerçeklenen fırının tasarım hedeflerine uygunluğu gerekli testlerle doğrulanmıştır. Çalışmamızın amaçlarından olan mikrodalga ile deri kurutma konusunda literatürde çok fazla bir çalışmaya rastlanmamış, özellikle mevcut çalışmalarda deri kalitesi ve matematiksel modelleme kullanılarak ısı ve nem transferinin yeterince incelenmediği saptanmıştır. Ayrıca, bu çalışmalarda çoğunlukla ev tipi mikrodalga fırınlan kullanılmış, endüstrideki uygulamalara yönelik gerçek boyutlarda fırın kullanılan çok az sayıda çalışmaya rastlanmıştır. Diğer taraftan bu çalışmada ısı ve nem dağılımını matematiksel olarak incelemek için kullandığımız Zaman Düzleminde Sonlu Farklar (FD-TD) sayısal yöntemle ilgili çalışmalara literatürde sıklıkla rastlansa da bu çalışmalarda bu yöntem ile modellenen fırınlar yöntemin sınırlamaları nedeniyle küçük boyutludur. Çalışmamızda bu sınırlamaları aşmak için Alt Hücre modeli FD-TD sayısal yöntemi ile birleştirilerek büyük hacimli kısmi yüklü fırınların modellenmesine olanak sağlayan bir matematiksel yöntem geliştirilmiştir. Bu yöntemin diğer bir uygulaması da çalışmamızda mikrodalga enerjisini fırına küple eden yarıklı dizi uyarıcının modellenmesidir. Gerçeklenen mikrodalga fırın içerisinde yük üzerinde ısıya dönüşen elektromagnetik güç dağılımı, İR termal kamera fotoğrafları çekilerek elde edilen sıcaklık dağılımlarından ve bu fotoğrafların analizlerinden yaralanılarak değerlendirilmiştir. Çalışmada geliştirilen matematiksel yöntemin geçerliliği yapılan deneylerin sonuçlarıyla karşılaştırılarak gösterilmiştir. Ayrıca deri kurutma için yapılan deney sonuçlarından istatistiksel bir kuruma eğrisi elde edilmiş, ölçüm sonucu elde edilen kuruma eğrisinin üstten istatistiksel model, alttan ise matematiksel model sonucu elde edilen eğriler arasında kaldığı görülmüştür. Geliştirilen matematiksel modelin maddeye özel endüstriyel mikrodalga fırınlarının tasarımında kullanılabileceği sonucuna varılmıştır. Mikrodalga fırında kurutulan deriler üzerinde yapılan kalite değerlendirmelerinde kurutma sonunda derinin doğal yapısının bozulmasına neden olacak bir etkinin oluşmadığı, mikrodalga ile kurutmada istenilen düşük nem seviyesine konvansiyonel kurutma sistemlerinden çok daha kısa sürede ulaşıldığı, kurumanın derinin tüm bölge ve kesitlerinde daha homojen bir dağılım gösterdiği, fiziksel test ve sonuçları açısından da mikrodalga enerjisi kullanılarak kurutulan derilerde kalitenin daha iyi olduğu gözlenmiştir. XII SUMMARY Investigation of Heat and Moisture Transport with Microwave Heating In this work heat and moisture transport under microwave heating is investigated. For the investigation a microwave oven is designed and realized. The necessary tests are done to verify the specifications of the designed microwave oven. In the literature there are not much work done on drying of leather using microwave energy, which is one of the aims of this work. In these works research on the quality of leather and the mathematical models developed to investigate the heat and mass transfer is not sufficient. Also in these works generally home type microwave ovens are used and less work is done on industrial sized ovens. On the other hand, Finite Difference Time Domain (FD-TD) numerical method used in this work is widely used in the literature for modeling small sized microwave ovens due to the restrictions of the method. In our work to overcome these restrictions a mathematical method is developed which combines Sub Cell method with FD-TD numerical method to model partially loaded large sized ovens. Other application of this method is the modeling of the slotted array feeder that couples the microwave energy to oven. Electromagnetic power dissipation is determined from the temperature distributions on the load that is measured by the thermal photography which is taken by IR thermal camera and from thermal photography analysis. The validity of the mathematical model is shown from the comparison between experimental and numerical results. Also from the experimental solution a statistical drying curve is found and it is seen that the statistical model bound the experimental solution on the upper and by the developed mathematical model on the lower side. As a result the developed mathematical model is found to be applicable on the design of microwave ovens for material processes. On the quality studies of leathers which are dried in the microwave oven, it is found that microwave energy does not deform the natural structure of the leather. The required low moisture level is reached with microwave drying much faster than conventional systems and the moisture distribution of leather samples dried with microwave energy is more homogenous. Also the results of the physical tests show that the leathers dried using microwave energy is better on the quality. XIII
