dc.description.abstractBu çalışmada, Kars İli'nden alınan taze ve konserve balık türleri ile inek ve tavuk etlerinin kas dokusunda bazı ağır metallerin (Fe, Cu, Mn, Zn, Cd ve Pb) düzeyleri belirlendi. Örnekler 2007-2008 yıllarında Kars İli'ndeki süpermarketlerden toplandı ve Atomik Absorbsiyon Spektrofotometresinde (AAS) analiz edildi.Taze ve konserve balıklar, inek ve tavuk etlerinde metallerin sıralanması ve konsantrasyonları, Mn (2.95?6.27) > Fe (0.79?3.04) > Zn (0.11?2.93) > Cu (0.91?2.51) > Pb (0.05?0.17) > Cd (0.04?0.045) ppm olarak bulundu.Balıklarda metallerin konsantrasyonları ulusal ve uluslararası kuruluşların müsaade edilebilir sınır değerleriyle kıyaslandı. En yüksek metal konsantrasyonu konserve palamut (Sarda sarda)'da en düşük taze havuz balığı (Carassius gibelio) ve levrek (Dicentrarchus labrax)'de bulunurken, insan sağlığı yönünden hiçbir risk tespit edilmedi. Ancak, bölge insanı tarafından tüketilen bu gıda ürünlerindeki metallerin periyodik olarak izlenmesi gerekmektedir.Anahtar Kelimeler: konserve balık, taze balık, inek eti, tavuk eti, ağır metal birikim, Kars.
dc.description.abstractIn this study, the levels of some heavy metals (Fe, Cu, Mn, Zn, Cd and Pb ) were measured in the muscle tissues of certain fresh and canned fish species, cow and chicken meat consumed in Kars, Turkey. Samples collected from Kars supermarkets between 2007 and 2008 and were analyzed by Atomic Absorption spectrophotometer (AAS).The order of the metals in the fresh and canned fish samples cow and chicken meat, and their concentration ranges in ppm was Mn (2.95?6.27) > Fe (0.79?3.04) > Zn (0.11?2.93) > Cu (0.91?2.51) > Pb (0.05?0.17) > Cd (0.04?0.045).The metal concentrations of fish studied were compared with the permissible levelş proposed by national and international organisations. The highest metal concentrations were obtained from canned Sarda sarda, while the lowest value was observed in fresh Carassius gibelio, and Dicentrarchus labrax, and it was determined that they did not pose any risk for human healt. However, periodic monitoring of these metals in these food productions consumed by local people is recommended.Key word: canned fish, fresh fish, cow, chicken meat, heavy metal accumulation, Kars.en_US
