Gıda işletmelerinde risk değerlendirmesinin önemi ve bir işletmede uygulanması

Abstract

Günümüzde gelişen teknoloji ve sanayileşme ile birlikte çalışma hayatının iş sağlığı ve güvenliği açısından olumsuz etkilenebileceği sorunlar meydana gelmektedir. İş sağlığı ve güvenliği alanında yapılan çalışmaların amacı da bu sorunların çözümünü bulmaktır. Böylece işletmelerde oluşabilecek sorunların önüne geçebilme fırsatı olup, iş verimini artıracak ve personeli koruma sağlayacaktır.Bu çalışmada iş sağlığı ve güvenliğinin önemi, risk değerlendirmesinin amacı ve risk değerlendirmesi ele alınmıştır. Yapılan risk değerlendirmesi gıda sektöründe yer alan bir işletmede gerçekleşmiştir. Öncelikle iş yerindeki olası tehlikeler belirlenmiş olup L Tipi Matris ve Fine Kinney Metodu ile iki ayrı risk değerlendirmesi yapılmıştır. Böylece iki farklı metodun kıyaslanarak hangisinin daha verimli olduğu belirlenmiştir. Ayrıca Acil Eylem Planları yapılarak doğal afetler ya da öngörülmeyen olaylar nedeni ile oluşan acil durumlarda, insan ve çevre sağlığına gelebilecek zararı en aza indirmek için gerekli müdahalenin erken ve etkin bir şekilde yapılması amaçlanmıştır.Sonuç olarak yapılan risk değerlendirmesi ile belirlenen riskler için 6331 Sayılı İş Sağlığı ve Güvenliği Kanunu gereği alınacak önlemler belirlenmiştir.

With the advancements in technology and industrialization, some problems, which business life might be affected negatively in terms of occupational health and safety, occur. The aim of the studies done in the of area of occupational health and safety is to find solutions for these problems. This will give a chance to avoid some possible problems in business, will increase the productivity and provide an opportunity for protection the rights of employees. In this study, the importance of occupational health and safety, risk assessment and the aim of risk assessment are discussed. Risk assessment was carried out in a business in food industry. First, the possible dangers in the work place were identified and then, two different types of risk assessment were conducted using L type Matrix and Fine Kinney Method. Thus, by comparing these different two methods it was determined which method was more efficient. In addition, by making Emergency Action Plans it has been aimed that necessary and effective steps will be taken to minimize the harm to human health and environment in case of emergencies caused by natural disasters or unexpected cases. In conclusion, for the risks that were detected in risk assessments, measures have been determined by the law no 6331 on Occupational Health and Safety.
