dc.description.abstract | Ill ÖZET Piyasada satılmakta olan sucuk örneklerinde katkı mad desi olarak kullanılan nitrat ve nitrit, standart kabul e- dilen kadmiyum indirgeme metodu ve enzimatik met odla tayin edildi. Sonuçlar karşılaştırıldı, Enzimatik ve standart me- todla aynı örneklerin analizinden benzer sonuçlar elde e- dildi, Enzimatik metodun kadmiyum indirgeme metodu yerine sucuklarda nitrat ve nitrit tayininde başarılı bir şekilde kullanılabileceği anlaşıldı. Ülkemizde üretilen sucuk örneklerinde nitratın 4,61- 455,00 ppm ve nitritin 2,30-21,00ppm olduğu tesbit edildi. | |
