dc.description.abstractIll ÖZET Piyasada satılmakta olan sucuk örneklerinde katkı mad desi olarak kullanılan nitrat ve nitrit, standart kabul e- dilen kadmiyum indirgeme metodu ve enzimatik met odla tayin edildi. Sonuçlar karşılaştırıldı, Enzimatik ve standart me- todla aynı örneklerin analizinden benzer sonuçlar elde e- dildi, Enzimatik metodun kadmiyum indirgeme metodu yerine sucuklarda nitrat ve nitrit tayininde başarılı bir şekilde kullanılabileceği anlaşıldı. Ülkemizde üretilen sucuk örneklerinde nitratın 4,61- 455,00 ppm ve nitritin 2,30-21,00ppm olduğu tesbit edildi.
dc.description.abstractIV SUMMARY The nitrate and nitrite whichc are used as.additi ves in the goudjouks avaliable in Turkish markets are deter mined by standart Cadmium reduction and enzymatic methods. The results are compared with eachr.other. The analysis resalts of same samples obtained by two methods was simi- liar and thus the enzymatic method.can be used to deter mine the nitrate and nitrite content of the soudjouks ins tead of cadmium reduction method successfully. The nitrate.concentrations were between 4-, 61-43 5 »00 ppm and the nitrite concentrations were between 2,30- 21,00 levels in Turkish soudjouks.en_US
