Süt ve süt ürünleri sektöründe maliyet muhasebesi ve bir uygulama

Abstract

Süt başta gelişme yaşında çocuklar olmak üzere 7'den 70'e herkesin sağlığı için gerekli olan tüm besin değerlerini içinde bulunduran vazgeçilmez tek besin kaynağıdır. Büyüme ve gelişmenin temel yapı taşlarından biridir.Süt ve süt ürünleri Dünya'da ve Türkiye'de halkın beslenmesinde büyük bir paya sahiptir.Son yıllarda ekonomik, teknolojik, sosyal ve siyasi gelişmelerle orantılı olarak sektördeki büyüme, rekabet koşullarının da artmasına olanak sağlamıştır. Artan rekabet koşulları daha kaliteli ürünlerin ucuz maliyetlerle üretilmesine sebep olmaktadır.En az maliyetle üretim işletmelere üstünlük tanımaktadır. Bu noktada üretim yapan firmalarda maliyet muhasebesinin önemi gün geçtikçe önem arz etmektedir. İşletmelerde üretilen mal ve hizmet maliyetlerinin doğru hesaplanabilmesi için doğru ve işleyişi kolay olan bir maliyet sistemine ihtiyaç vardır.Bu çalışmada süt ve süt ürünleri sektörü kapsamlı bir şekilde ele alınmıştır. Süt ve süt ürünlerinin gelişimi, istihdam gücü, Türkiye,Dünya ve AB'de ki sektörün durumu ve gelişmeleri incelenmiştir. Süt ve süt ürünleri işletmelerinde üretim maliyetlerinin yapısı incelenerek maliyetlere etki eden faktörler belirlenmiştir. Örnek uygulamada süt ve süt ürünleri sektörünün işleyişi anlatılarak kalite ve randımanı artırıcı etkenlere değinilmiştir. Firmanın üretim aşamasında kullanmış olduğu maliyet yöntemleri belirlenerek standart maliyet sistemine yer verilmiştir. Milk is the only indispensable food source that contains all required nutritional values for the health of primarily children and for all people from 7 to 70. They are among the keystone foods for growth and development and play a very important role in nutrition of all people in the world and in Turkey.Sectoral growth related to economic, technological, social and political developments in recent years has provided opportunity for increase in competition conditions. Increased competition causes high quality porducts to be produced with low costs, and this provides great advantages for companies that produce products in efficient costs. In this context, importance of cost accounting in production companies increases with each passing day. There is a need for an accurate and functional cost system for correct calculation of costs of produced goods and services in companies.This study inclusively examines milk and milk products sector. The study researches development of milk and milk products, employment volume, and situation and development of the sector in Turkey, in the world and in the EU. The factors having effect on the costs are identified by examining structure of the production costs of milk and milk products companies. The model practice in this study describes operational structure of the milk and milk products sector and mentions performance improving factors. Standard cost methods is included in the study by identifying cost methods used by companies in the production phase. In the last chapter of the study, sector's problems are expressed and provided suggestion for solution.KeyWords: Accounting, Cost Accounting, Milk and Milk Products Sector
