dc.description.abstractBu çalısmada inek (Siyah Alaca), koyun (vesi) ve keçi (Sami) sütlerinde, busütlerden üretilen yogurt ve torba yogurtlarda, torba yogurt üretiminde bir yan ürün olanserumda kimyasal nitelikler ile esansiyel ve esansiyel olmayan 26 elementbelirlenmistir.Mikrodalga sistemde yas yakma teknigi kullanılarak hazırlanan örneklerdeelementler ndüktif Eslesmis Plazma Optik Emisyon Spektrometresi (ICP-OES) iletespit edilmistir. nek, koyun ve keçi torba yogurtlarında esansiyel elementlerinortalama miktarları (ppm) sırasıyla; Ca 1060, 1807, 1231; Na 373, 785, 483; K 1527,1707, 1894; P 1639, 2180, 1728; Mg 425, 478, 467; Co 0.28, 0.36, 0.16; Cr 1.21, 1.32,1.26; Cu 0.24, 0.83, 0.38; Fe 0.45, 0.59, 0.41; Mn 0.29, 0.24, 0.29; Mo 1.42, 0.84, 0.88olarak belirlenmistir. Esansiyel olmayan elementler ise inek, koyun ve keçi torbayogurtlarında sırasıyla; Ag 0.32, 0.67, 0.71; Al 6.73, 7.60, 7.18; B 23.26, 10.59, 11.64;Ba tanımlanamadı, 0.37, tanımlanamadı; Be 0.06, 0.12, 0.04; Cd 0.18, 0.18, 0.19; Ni2.72, 2.32, 2.31; Pb 3.21, 4.13, 3.70; Sb 2.31, 2.12, 2.57; Ti 0.46, 0.23, 0.19; TI 7.18,7.17, 7.37 ve V 1.30, 1.34, 1.42 ppm olarak tespit edilmistir.Analiz edilen örnekler arasında keçi sütü, yogurdu, torba yogurdu ve serumuen yüksek miktarda K elementini içermistir. Ca, Na, P, Mg ve Co esansiyel elementleride koyun torba yogurdunda en fazla seviyede belirlenmistir.Mikro elementlerden B tüm torba yogurtlarda en yüksek miktarda çıkmıstır.Ba elementi ise inek ve keçi torba yogurtlarında tanımlanamamıstır. Mikroelementlerden yalnızca B (P<0.05) ve Cu (P<0.001) torba yogurtlar arasındaistatistiksel olarak önemli farklılıklar göstermislerdir.Sonuçta torba yogurtların P, Ca, Mg, Se ve Zn; serumun ise K, Na ve laktozbakımından önemli birer kaynak oldugu ortaya konmustur. Torba yogurt üretimisırasında torbada en fazla tutulan element P, en az tutulan element K olmustur. dc.description.abstractIn this study the gross chemical composition as well as the concentration ofessential and non-essential 26 elements were determined in cow (Holstein), sheep(Awassi) and goat (Damascus) milks and their products that called as yoghurt,concentrated yoghurt and whey.In samples that were prepared on microwave system. Elements aredetermined by the analysis with inductively coupled plasma optical emissionspectrometer (ICP-OES). The mean levels (ppm) for essential elements of cow, sheepand goat concentrated yoghurt are determined as; Ca 1060, 1807, 1231; Na 373, 785,483; K 1527, 1707, 1894; P 1639, 2180, 1728; Mg 425, 478, 467; Co 0.28, 0.36, 0.16;Cr 1.21, 1.32, 1.26; Cu 0.24, 0.83, 0.38; Fe 0.45, 0.59, 0.41; Mn 0.29, 0.24, 0.29; Mo1.42, 0.84, 0.88, respectively. The mean values (ppm) for non- essential elements ofcow, sheep and goat concentrated yoghurt are determined as; Ag 0.32, 0.67, 0.71; Al6.73, 7.60, 7.18; B 23.26, 10.59, 11.64; Ba not detected, 0.37, not detected; Be 0.06,0.12, 0.04; Cd 0.18, 0.18, 0.19; Ni 2.72, 2.32, 2.31; Pb 3.21, 4.13, 3.70; Sb 2.31, 2.12,2.57; Ti 0.46, 0.23, 0.19; TI 7.18, 7.17, 7.37 ve V 1.30, 1.34, 1.42, respectively.In the analyzed samples, goat milks and their products that called as yoghurt,concentrated yoghurt and serum showed the highest amounts of K. The levels of Ca,Na, P, Mg and Co essential elements are detected in highest level in sheep concentratedyoghurt.Micro element B is detected in highest level in all concentrated yogurts. Baelement is not detected in cow and goat concentrated yoghurt. Among micro elements,only B (P<0.05) and Cu (P<0.001) shows important statistical differences in three typesof concentrated yoghurt.As a result, it is stated that concentrated yoghurt is an important source of P,Ca, Mg, Se and Zn; and serum samples shows that serum is an excellent source oflactose as well as Na and K. During concentrated yoghurt production the losses ofmajor elements K was the most and losses of P was the least.
