Türk mutfak kültürü kapsamında Hatay`ın gastronomi şehri olarak değerlendirilmesi

Abstract

Küreselleşen ve globalleşen dünyada tüketici taleplerinin çeşitlenerek artması turizm sektöründe yeni arayış içine girilmesine sebep olmuştur. Ülkelerin; hem kültürünü, yaşam şeklini, doğal güzelliklerini, yemeklerini sergileyerek ekonomik kazanç elde edebilmeleri hem de turistlerin taleplerini karşılayabilmeleri için gastronomi turizmi önem taşımaktadır. Tüm yıla yayılabilecek bir turizm türünün geliştirilmesi ; bugüne kadar turizm potansiyeliyle ön planda olamamış, geri kalmış bölgeler için ekonomik kalkınma aracı olabilmesi için önemli bir husustur. Turistler artık kendilerininkinden farklı kültürleri de deneyimlemek istemektedirler. Bu yüzden soyut yerel kültür varlıklarına ve geçmişini bugünde hala aynı şekilde yaşatabilen yerel toplumlara ilgi duymaya başlamışlardır. Bu ilgi soncunda oluşan soyut yerel kültür varlıklarına dayalı turizm çeşitleri turizm sektöründe yükselişe geçmekle beraber birçok ülke de az gelişmiş bölgelerini kalkındırabilmek için soyut yerel kültür varlıklarını kullanmaktadır. Bu farklılık arayışını ekonomik bir kalkınma aracına dönüştürmek isteyen ülkeler, bölgeler, iller, yöreler alternatif turizm çeşitleri üretmişlerdir. Gastronomi turizmi de bunlardan biridir. Gastronomi turizminin geliştirilmesiyle hem bölgenin tanıtılması açısından turizme açılması hem de kültürel mirasa sahip çıkılıp korunup, geliştirilerek ekonomik katkı sağlamasına destek olunmuştur.Hatay mutfağının ağırlık kazandığı bu çalışma da Orta Asya'dan itibaren mevcut olan Türk mutfak kültüründen, gastronomi turizmi için gerekli olan turizm ürünü unsurlarından, dünyadaki gastronomi turizmi örneklerinden, Türkiye'de ki gastronomi turizmi örneklerinden bahsedilmiştir. Araştırmamız da Hatay mutfak kültürü, Hatay 'ın dünya gastronomi şehri olması, topraklarının üzerinde barınan medeniyetlerle mutfak kültürü etkileşiminin de bulunması da yer almaktadır. Araştırmamızda Hatay mutfağının çok zengin bir mutfak kültürüne sahip olduğunu, gastronomi şehri seçilmesiyle bölgenin kalkınabileceği, fakat gerekli faaliyetler gerçekleştiğinde bunları mümkün olabileceği araştırmanın mülakat analizleri sonucunda ortaya çıkmıştır.Anahtar Kelime:Turizm Ürünü, Gastronomi Turizmi, Türk Mutfak Kültürü, Hatay Mutfak Kültürü

The changing and varying increase in the consumer demands in the globalizingworldhas led to new pursuits in the tourısm sector. The gastronomy tourism plays a significant role not only in countries' obtaining economic income by exhibiting their culture, way of life, natural beauties and dishes but in their ability to meet the demands of tourists, as well. It is an important matter for the regions that are under-developed and not in the forefront with their touristic potential that developing a type of tourism which can be extended through a whole year may become an economic development tool. Today, tourists would like to experience different cultures from their own. Therefore, they have started to get interested in abstract cultural properties and the local communities that sustain their past still in the same way. The types of abstract local cultural property tourism evolved as a result of this interest are on an increase in the tourism sector. Besides, many countries benefit from abstract local cultural properties so as to develop their less developed regions. The countries, regions, cities and provinces that seek to turn this pursuit of difference into a development tool have produced alternative types of tourism. One of these types is the gastronomy tourism. Developing the gastronomy tourism has bothhelped the region be opened to tourism in order toget known world-wide and contributed economically by protecting and looking after the cultural heritage and improving them. This Hatay cuisine oriented study provides information about the Turkish cuisine culture that has remained since the Middle Asia, about tourism components needed for the gastronomy tourism, about the examples of gastronomy tourism both in Turkey and the World. This research covers such issues as Hatay's cuisine culture, its being the World's gastronomy city, and the presence of interaction of the civilizations residing on its land with the cuisine culture. As a result of the interview analysis of the research, it has been established that Hatay cuisine has a really rich culture and that the region may develop if the city is chosen as the world's gastronomy city, however, this development could be achieved only if the necessary activities are realized.Keywords: Tourism Product, Gastronomy Tourism, Turkish Cuisine Culture, Hatay Cuisine Culture.
