Gümüşhane meyve suyu fabrikası`nın enerji ve ekserji analizi

Abstract

Bu çalışmada; Gümüşhane Meyve Suyu Fabrikası'nın 2010 yılındaki üretim verileri kullanılarak meyve suyu ve marmelat üretim süreçleri için enerji ve ekserji analizleri yapılmıştır. Bu analizler sanayideki üretim tesislerinin enerji verimliliğini artırmak ve atık enerjinin geri kazandırılmasını amaçlamaktadır. Bu amaç doğrultusunda endüstriyel tesislerde enerji ve ekserji analizleri termodinamik açısından büyük önem taşımaktadır. Sürekli akışlı bir açık sistem olarak ele alınan meyve suyu ve marmalet üretim süreçlerine giren ve çıkan her bir durum için enerji ve ekserji analizi sonuçları elde edilmiştir. Bu sonuçlara bağlı olarak meyve suyu ve marmalet üretim süreçlerinin birinci ve ikinci kanun verimleri tespit edilmiştir. Elde edilen sonuçlar değerlendirilerek birinci ve ikinci kanun verimlerini iyileştirmek için Gümüşhane Meyve Suyu Fabrikası'na önerilerde bulunulmuştur.Anahtar Kelimeler: Kuşburnu suyu üretimi, enerji, entropi, ekserji, ekserji verimi, ekserji yok oluşu, termodinamik, tersinmezlik.

In this study, it is made the energy and exergy analyzes for the fruit juice and jam production processes by using production data of Fruit Juice Factory of Gümüşhane in 2010. These analyzes aim to gain them back to the waste of energy and to increase energy efficiency of production facilities in the industry. For this purpose, energy and exergy analyzes of industrial plants is of great importance in terms of thermodynamic. It is obtained the results of energy and exergy analysis for each condition entering and leaving to production processes of the fruit juice and jam taken as an continuous flow open system. Depending on these results, the first and second laws of fruit juice and jam the production process yields were determined. It is made suggestions to the Fruit Fuice Industry of Gümüşhane in order to improve the efficiency of the first and second law by evaluating the results obtained.Keywords: Production of furit juice, energy, entropy, exergy, exergy efficiency, exergy destruction, thermodynamics, irreversibility.
