Sanat olarak gastronomi ve görsel sanatlarla ilişkisi

Abstract

Niceliksel olarak önemini kaybedip niteliksel bir önem kazanan günümüz gastronomisinin sanatsal yönünün kabul edilirliği; Türk mutfağı ve dünya mutfağında önemi gün geçtikçe daha da artmaktadır. Bilim, teknoloji ve ekonomik olarak ilerleyen insanlar, artık sadece karınlarını doyurmaktan öte göz zevkine hitap eden, estetik bir amaç taşıyan, mideden çok ruhu doyuran ve sanatsal bir görünüme sahip yiyecek-içecekleri tercih etmektedirler. Gelişen gastronomi kültüründe sanat dallarından olan görsel sanatlardan yararlanılarak lezzetli olmasının dışında yemeğe sanatsal bir görünümde kazandırılabilmektedir. Bu bağlamda bu çalışmada belge ve dokümanlar taranarak örneklerle araştırma metodu kullanılmıştır. Bu çalışmanın amacı gastronominin sanatsal özelliği, sanatın tanım ve özelliklerinden yola çıkılarak gastronominin sanatsal yönü, sanatta kendini ifade ettiği yönleri, ilişkili olduğu sanat dalları ve görsel sanatlarla aralarında ne gibi ilişkiler olduğunu ve bu ilişkiyi gösteren Türk ve dünya mutfağında yapılmış somut örneklerin neler olduğunu bulmaya yöneliktir. Üç bölümden oluşan bu çalışma birinci bölümde gastronominin tanım, özellikleri ve tarihine yer verilmiş. İkinci bölümde sanatın tanımı, türleri, özellikleri ve sanat olarak gastronomi ele alınmıştır. Son olarak üçüncü bölümde ise örneklerle gastronomi ve görsel sanatlarla ilişkisi başlığı adı altında görsel sanatlardan olan resim, heykel ve mimari sanatları ile gastronomi arasında ilişkilendirme yapıldıktan sonra konu ile ilgili Türk ve dünya mutfağından örnekler verilmiştir. Tezin sonunda ise sonuç kısmı ve sonuç kısmının içerisinde önerilere yer verilmiştir.Anahtar Kelimeler: Gastronomi, Sanat, Görsel sanatlar

Admissibility of the artistic aspects of contemporary gastronomy, which lost importance quantitatively and gained qualitatively ; is increasing importance day by day in both Turkish cuisine and world dishes.The people progressing economically,technologically and in science do not prefer only feeding themselves but also having dishes that has an artistic purpose and satisfies the very spirit of the stomach.They prefer food and drink that has an artistic view. In the growing gastronomic culture, making use of visual arts, apart from the taste, the food can be acquired to have an artistic look.In this context, in this study,the research method is used with examples including scanned documents. The purpose of this study is to find out the artistic aspect of gastronomy, how they express themselves in art, in which branches of art it has relation with and what type of relation it has with the visual arts. While doing this, the work is inspired from the description of art and artistic aspect of gastronomy. It also has the concrete samples of these relations from the Turkish and the world cuisine. In this study consists of three parts, the first part is on the definition, features and the history of gastronomy. The second part is on the definition of art itself, types and properties of art and gastronomy as art. And the third part, the relation of gastronomy with art,sculpture and architecture, under the title of relation between gastronomy and visual arts is associated and the samples from Turkish and international cuisine are given. At the end of the thesis, there comes the conclusion part including some necessary suggestions.Key Words: Gastronomy, Art, Visual Arts
