dc.description.abstractuı ÖZET Bu çalışmada, yurdumuzda yetiştirilen kırmızıbiberlerden (Capsicum annuum) gıda boyası olarak kullanılabilecek, renk maddelerince (karotenoidler) zengin bir ürün eldesi amaçlanmıştır. Literatürde mevcut verilerin paralelinde gerçekleştirilen laboratuvar ölçekteki çalışmalar sonucunda %.0.81 a ve B karoten ve %. 17.60 kapsantin ihtiva eden bir ürün elde edilmiştir. dc.description.abstractIV SUMMARY The objective of this study was to obtain a food colorant from Turkish red bell peppers {Capsicum annuum) rich in coloring matters (carotenoids). Studies have been conducted for purification of carotenoids present in fresh and previously extracted capsicum oleoresins. Techniques similar to those given in the literature such as extraction followed by saponification were used on bench scale experiments. Carotenoid content of the saponified product were quantified by HPLC. p-carotene, together with a-carotene and capsanthin were present as 0.81% and 17.60% in the product respectively.
