| dc.description.abstract | Bu çalışmanın amacı, doğal köy yoğurtlardan izole edilmiş olan 118 Streptococcus thermophilus ve 32' si Lactobacillus bulgaricus'un biyojen amin üretme potansiyellerinin moleküler olarak belirlenmesidir. Toplam 150 izolatta histamin (hdc), tiramin (tdc), pütresin (odc) ve kadaverin (ldc) olmak üzere dört farklı geni polimeraz zincir reaksiyonu (PZR) ile belirlenmiştir. 25 adet S. thermophilus izolatın histamin, 16 adet S. thermophilus ve 1 adet L. bulgaricus izolatın tiramin, 3 adet S. thermophilus izolatın izolatın pütresin ve 2 adet S. thermophilus izolatın izolatın kadaverin üretme potansiyeli PCR ile belirlenmiştir. | |
| dc.description.abstract | The aim of this study is to determine molecular potential of biogenic amines production of 118 Streptococcus thermophilus and 32 Lactobacillus bulgaricus, isolated from natural yoghurts. Four different types of biogenic amines, histamine, tiramin, putresin, kadaverin, are determined by Polymerase Chain Reaction (PCR) in total 150 isolates. It was observed that 25 S.thermophilus isolates contain histamine, 16 S. thermophilus and one L. bulgaricus isolates contain tiramin, three S. thermophilus isolates contain putrescine and two of S. thermophilus isolates contain kadaverine gene. | en_US |
