dc.description.abstractÖZET Bu araştırma, okside yağların yemlerle alınması nedeniyle broilerlerin lipid metabolizmalarına yapabileceği zararlı etkileri saptamak amacı ile yapıldı. Çalışmada, yumurtadan yeni çıkmış 100 adet broiler ırkı civciv kullanıldı.Civcivler her bir grupta 50 adet olmak üzere Deneme ve Kontrol Grupları olarak ikiye ayrıldılar. Hayvanlar izonitrojenik ve izokalorik olarak ad. libitum beslendiler. Kontrol grubunun yemine iyi kaliteli ayçiçeği yağı (peroksit sayısı 3), deneme grubunun yemine okside ayçiçeği yağı (peroksit «ayısı 39) katıldı. Araştırma 42 gün sürdü, 3. ve 6. haftanın sonunda hayvanların kanat venalarından alınan kanlardan elde edilen serumlarda, total lipid, trigliseridler, total kolesterol, HDL, LDL ve VLDL kolesterol, total protein, albumin, globulin, SGOT, SGPT ve SGGT, glikoz ve total kalsiyum analizleri yapıldı. Sonuçlar, literatür bilgilerine dayanılarak değerlendirildi. Üçüncü haftanın sonunda, kontrol grubuna kıyasla, deneme grubunda, serum total lipid, trigliserid, HDL - kolesterol, albumin, kalsiyum konsantrasyonları, albumin/globulin oranları ve SGOT, SGPT ve SGGT aktiviteleri önemli (p<0,001) azaldılar. Serum LDL ve VLDL kolesterol, total protein, globulin, glikoz konsantrasyonları önemli (p<0,001) yükseldiler. Altıncı haftanın sonunda, kontrol grubuna kıyasla, deneme grubunda, serum total lipid, trigliserid, HDL-kolesterol ve kalsiyum konsantrasyonları ve SGPT, SGGT aktiviteleri önemli (p<0,001) azaldılar. Serum total kolesterol, LDL-kolesterol,total protein, globulin ve glikoz konsantrasyonları ve SGOT aktivitesi önemli (p<0,001) yükseldiler.Sonuç olarak, okside yağların içermiş olduğu toksik kimyasal bileşikleri yemlerle alan broilerlerde, lipid, karbonhidrat, protein ve mineral metabolizmalarının bozulduğu, serum transaminaz ve transpeptidaz aktivitelerinin etkilendiği saptandı.
dc.description.abstract-102- 7-SUMMARY The following research is dedicated to the possible harmful effects due to oxidized fats in fattened broiler chickens on lipid metabolism. In this experiment, 100 newly hatched broiler chickens were used. Animals were seperated in the Control and the Treatment Groups. Every group had 50 broilers. All of the broilers were fed isonitrogenic, isocaloric and ad. libitum. The broilers in the control group were fed with qualified vegetable oil (PON 3) and- the broilers in the treatment group were fed with oxidized vegetable oil (PON 39). This research was finished within 42 days. At the end of the third and sixth week the blood, samples were taken from the broilers' brachial venae. Sera were made from these blood samples. The analyses of total lipid, triglyceride, total cholesterol, HDL, LDL and VLDL-cholesterol, total protein, albumin, globulin, SGOT, SGPT, SGGT, glucose and total calcium were done on the serum samples. The results of the experiment were described with respect to the literature.. At the end of the third week, the following results of the treatment group were obtained in comparasion with the control group, the concentrations of the serum total lipid, triglyceride HDL-cholesterol, albumin and calcium, the percentage of the albumin / globulin, the activities of the SGOT, SGPT and SGGT were decreased (p<0,001) signifiantly.The concentrations of the serum LDL and VLDL-Cholesterol, total protein, globulin glucose were increased (p<0,001) signifiantly. At the end of the sixth week, the fallowing results of the treatment group were obtained in comparasion with the control group, the concentrations of the serum total lipid, triglyceride, HDL-cholesterol and calcium,the activities of the SGPT and-103- SGGT were decreased (p<0,001) signifiantly.The concentration of the serum total cholesterol LDL-Cholesterol, total protein globulin, glucose and the activity of the SGOT were increased (p<0,001) signifiantly. In conclusion, it is assumed that the metabolism of lipids, carbohydrates, proteins and minerals of the broilers, having received the oxidized vegetable oils with diets which have toxic chemical compounds, were distorted and the activities of serum transaminase and the transpeptidase were effected.en_US
