Abstract
İnfrared (IR) uygulaması hızlı, etkili ve ekonomik bir prosestir. IR gıdaya nüfuz eden dalgalar halinde iletilir ve daha sonra ısıya dönüştürülür. Bu çalışmada, IR uygulamasının pirinç (cv. Baldo, cv. Demir) ve arpa (637 ve 644 nolu arpa hatları) örneklerinin ana bileşenleri üzerine etkisi araştırılmıştır. 545, 727, 909, 1127 ve 1309 W IR güçleri tavlanmamış ve tavlanmış (%12 ve %15) pirinç örneklerine uygulanmıştır. Tavlanmamış ve tavlanmış (%20 ve %26) arpa örnekleri 814, 1003, 1208, 1342 ve 1505 W güçlerinde IR' ye maruz bırakılmıştır. En yüksek IR gücü tavlanmamış örneklerin renk değerlerinde belirgin değişikliklere neden olmuştur. Pirinç örneklerinin pişme süresinin IR uygulamasıyla azaldığı bulunmuştur. Her bir çeşitte en düşük pişme süresi değeri %15 rutubete tavlanmış ve 1309 W gücünde IR uygulanmış örnek için elde edilmiştir. Tavlama rutubeti ve IR gücü pirinç ve arpa örneklerinin çift kırınım özelliklerinde herhangi bir değişikliğe neden olmamıştır. Tavlanmamış pirinç ve arpa örneklerinin RVA (Mikro ViskoAnalizör) viskozite değerleri sırasıyla 1309 ve 1505 W güçlerindeki IR uygulamaları ile azalmıştır. Arpa örneklerinin in vitro nişasta sindirilebilirliği artan IR güçleri ile genellikle artarken pirinç örneklerinin in vitro nişasta sindirilebilirlikleri IR uygulaması ile önemli derecede değişmemiştir. Elektroforegramların densitometrik analizi IR gücü arttıkça bazı pirinç ve arpa proteinlerinin relatif bant yoğunluklarının azaldığını göstermiştir. Bu azalma sırasıyla tavlanmamış pirinç ve arpa örneklerinin 1309 ve 1505 W gücünde işlem görmüş örnekleri için daha belirgindir. Arpa örneklerinin protein çözünürlük değerleri IR gücü arttıkça kademeli olarak azalmıştır. IR uygulaması pirinç ve arpa örneklerinin toplam besinsel lif ve enzime dirençli nişasta değerlerinde önemli değişikliklere neden olmamıştır.Anahtar Kelimeler: infrared uygulaması, pirinç, arpa, nişasta, protein, besinsel lif Infrared (IR) treatment is a rapid, effective and economic process. IR is transmitted as wave, which penetrates the food and is then converted to heat. In this study, the effects of IR treatment on the main constitiuents of rice (cv. Baldo, cv. Demir) and barley (barley lines 637 and 644) samples were investigated. 545, 727, 909, 1127 and 1309 W IR powers were applied to non tempered and tempered (12% and 15%) rice samples. Non tempered and tempered (%20 and %26) barley samples were subjected to IR at 814, 1003, 1208, 1342 and 1505 W powers. Highest IR power caused marked changes in color values of non tempered samples. It was found that cooking time of rice samples were decreased with the IR treatment. In each cultivar, the lowest cooking time was obtained for the sample tempered to 15% moisture and treated at 1309 W IR power. Tempering moisture and IR power did not cause any difference in birefringence properties of the rice and barley samples. RVA (Rapid ViscoAnalyzer) viscosity values of the non tempered rice and barley samples decreased by IR treatments at 1309 and 1505 W powers, respectively. While in vitro starch digestibilities of barley samples increased generally with increasing IR powers, in vitro stach digestibilities of rice samples did not change substantially with IR treatment. Densitometric analyses of electrophoregrams indicated that as the IR power increased, relative band intensities of some rice and barley proteins decreased. This decrease was more pronounced for the non tempered rice and barley samples treated at 1309 and 1505 W powers, respectively. Protein solubility values of barley samples decreased gradually as the IR power increased. IR treatment did not cause substantial changes in total dietary fiber and enzyme resistant starch values of rice and barley samples.Keywords: infrared treatment, rice, barley, starch, protein, dietary fiber
